Brisket smoking advice?
I’ve only smoked a couple briskets before. They turned pretty good but, after watching some YouTube vids, thinking about doing a couple things different. 1- I’ve always done them fat cap up but going to do this one fat side down. 2- I’ve wrapped in foil but this time going to use pink butcher paper and pour some smoked wagyu beef tallow on the meat side as I wrap it. Any comments? @BigRedBuster?

Turned out awesome. Best one I’ve done by far. The flat sliced well, will accordion but not fall apart and not dry. The point….got some to slice but most kinda ripped apart. That point meat is money. Took about 1.5 lbs of burnt ends. Too tired to finish them today. Hopefully they’ll reheat okay with some sauce another day (next Saturday for the game) If not they’re fine as is.

@JJ Husker What was the internal temp when you pulled it off? Did you test the temp both in the point and flat?

@BigRedBuster It ranged from 198 to 202 in the 4 places I checked it. I don’t recall what it was specifically in the point. I think the long rest is where the point went a bit too far.
As far as carving, the flat was perfect, got good slices that would accordion but not fall apart. Slicing the point was a bit dicier. Got some slices but some fell apart. I was using a serrated bread knife so a better knife would’ve helped.
I may separate the point from the flat next time…?

Is it too late to switch directions on the new football temple? I’m imagining an ice rink with a future hockey facility built on the former memorial stadium site.

Well, it wasn’t terrible but there were some issues. First the good. It is brand new and clean. The location is good for games and access to the Haymarket area. It should help slightly with price and demand.
The bad. They struggled with being able to confirm reservations and the person who checked us in was not sufficiently trained. Our key cards did not work first time and had to go down to have them reprogrammed. There was an extraneous tv stand left in our room still in the bag. And the outer appearance was nothing at all like the artists rendering presented online.
The ugly. Valet parking was not as promised. Told us if we called down ahead they would have our vehicle out front. Called 15 minutes before we went down but they didn’t go to retrieve until we got down there…and it took another 22 minutes. And the street noise from O Street traffic was almost unbearable. We were on 2nd floor (avoid that). My sons room was on 3rd floor and it was slightly better. A few more floors up might be tolerable. The good thing was the AC unit was so GD loud that it would drown out the street noise when it kicked on. Overall, don’t plan on staying there again but maybe it will lighten demand and pricing on others in the area.

I had Verizon years ago, switched to T-Mobile, and now have Google Fi. If you don't use a lot of data over the cell network, then Google Fi is the way to go IMO. Cheaper than T-Mobile (a LOT cheaper than Verizon) with slightly better coverage/reception than T-Mobile (Verizon has better coverage/reception in remote areas like the mountains). My bill for two lines with all taxes and fees included range from $50-$65/month.

Well we made the change. Everything seems fine. I think T-Mobile may lack service in some remote areas but so far I'm getting 5G everywhere I go. I've definitely noticed a big uptick in speed. And I like my new iPhone 12, not as drastic of a change from Android as I imagined (but I'm fairly accustomed to iOS from my iPad). We got 4 lines of service for $35 per, all taxes and fees included. Unlimited everything. They can throttle a line when it exceeds 100GB in a month. We were sharing 15GB on Verizon for quite a bit money and only flirted with that volume a few times (because my son is constantly streaming something...)

Figures. 2 to 3 weeks from being able to get the vaccine and catch the 'rona. Luckily I don't think it's going to be very bad at all.....unless it gets worse than the last couple days.

First couple days was like a mild chest cold, thought I was getting better. Then day 3 or 4 headache got worse, started a fever and lost sense of taste and smell and pretty fatigued. I've felt better for sure but it won't be terrible if it doesn't get worse. Got the PCR test today so should know for sure in a day or two.

@knapplc I was surprised to hear them claim that was not reviewable. I thought anything involving targeting and player safety was reviewable. I can understand how they missed that one in live action though. Lots of stuff happening on that play....goal line, pylon, fumble....
