  1. I want to make these when my air fryer gets delivered, hopefully Saturday, along with my indoor grill. My new blender was delivered today, I am so happy! I want to make these chips when my air fryer gets delivered. Air-Fryer Potato Chips: Ingredients: 2 Large Potatoes Olive Oil-Flavored Cooking Spray 1/2 Tsp. Sea Salt Minced Fresh Parsley, Opt. Directions: Preheat air fryer to 360°. Using a mandoline or vegetable peeler, cut potatoes into very thin slices. Transfer to a large bowl; add enough ice water to cover. Soak for 15 minutes; drain. Add more ice water and soak another 15 minutes. Drain potatoes; place on towels and pat dry. Spritz potatoes with cooking spray; sprinkle with salt. In batches, place potato slices in a single layer on tray in greased air-fryer basket. Cook until crisp and golden brown, 15-17 minutes, stirring and turning every 5-7 minutes. If desired, sprinkle with parsley.
  2. Breakfast Casserole: 6 Cups Shredded Hash-Browns 6 T. Butter, Melted 1-lb. Sausage, Browned And Drained 2 T. Onions, Chopped 1/2 Cup Green Or Red Peppers, Diced 2 Cups Shredded Cheddar Cheese 4 Large Eggs 1 Cup Half & Half Or Heavy Cream A Few Dashes Of Franks Red Hot Sauce Salt & Pepper, To Taste Preheat oven to 425 degrees. Directions: Put potatoes in a bowl and pour melted butter over; stir until combined. Pour into 9x13-in. dish and press to make a crust. Bake 20-25 minutes or until potatoes are crisp around the edges. Remove from oven and set aside. Brown sausage with onions and peppers; drain. In a medium bowl, whisk eggs, Half & Half or cream, hot sauce, salt and pepper. Sprinkle sausage, onions, and pepper mixture over the potato crust. Sprinkle the shredded cheese over the sausage. Pour egg mixture over all. Reduce heat to 400 degrees and bake 20-25 minutes or eggs are set in the center.
  3. I bet these are good! Parmesan Ranch Mushrooms: 16-oz.s Fresh Mushrooms 1/2 Cup Butter 1-oz. Pkg. Hidden Valley Ranch Dressing Mix 2 T. Parmesan Cheese-(Or More, To Taste) Melt the butter in a bowl and add the Hidden Valley Ranch Dressing Package. Mix well and pour over mushrooms in the crock-pot. Sprinkle with about 2 T. of Parmesan Cheese-(or more to your liking.). Let them cook in the crock-pot for 4 hours on low.
  4. Shrimp Stuffed Mushrooms: 1/4 Cup Olive Oil 1/2 Cup Onion, Chopped Fine 1/4 Cup Fresh Basil, Chopped Fine 3 Garlic Cloves, Chopped Fine 1/2 Tsp. Fresh Rosemary, Chopped Fine 6-oz.-(1-1/2 Cups)-Cooked Shrimp, Chopped 2/3 Cup Breadcrumbs, Prefer Fresh 1/2 Cup Parmesan Cheese, Grated 1/4 Cup Mayonnaise 8-(2-in.)-Baby Portobello Mushrooms, Gills Removed Set oven to 350 degrees. Heat oil in a heave skillet, add onion, basil, garlic and rosemary. Sauté until onion is soft, about 5 minutes. Place vegetables in a bowl and add everything else except the mushrooms. Stuff mushroom caps with filling-(don't be shy, add as much filling as it will hold). Bake 35 minutes until top is browned.
  5. Fried Okra Ingredients: 1-1-1/2-lbs. Okra, Caps Cut Off And Sliced 1 Cup Self Rising Flour 1/3 Tsp. Salt 1/4 Tsp. Pepper Milk Or Buttermilk Vegetable Oil Instructions: 1. In a pie plate or paper lunch bag, mix together flour, salt and pepper. 2. Let okra soak in milk after cut while mixing flour and heating oil 3. Transfer to pie plate or paper bag and coat okra with flour. 4. Heat oil until about 375 degrees. 5. Place okra in hot grease, careful to not overcrowd. 6.Once golden brown remove from fryer. Put okra in a paper towel-lined plate. Serve warm. ***i like to dip it in Ranch Dressing!

  7. I found this recipe on a site that I belong to and I copied it and added it to my recipe collection; I added my notes. I always call them Nebraska Farmer sandwiches. I love to make these! Patty Melts: Ingredients: 1 Stick Butter 1 Whole Large Onion, Halved And Sliced 1-1/2-lbs. Ground Beef Salt And Pepper, To Taste ***I Use Garlic Salt 5 Dashes Worcestershire Sauce 8 Slices Swiss Cheese 8 Slices Rye Bread ***Sometimes I Add Amazing Taste Hamburger Seasoning When Making The Hamburger Patties Instructions: In a medium skillet, melt 2 tablespoons of butter over medium-low heat. Add in the sliced onions and cook slowly for 20 to 25 minutes, stirring occasionally, until the onions are golden brown and soft. In a medium bowl, mix together the ground beef, salt and pepper, and Worcestershire Sauce; form into 4 patties. Melt 2 tablespoons butter in a separate skillet over medium heat. Cook the patties on both sides until totally done in the middle. Assemble patty melts this way: Slice of bread, slice of cheese, hamburger patty, 1/4 of the cooked onions, another slice of cheese, and another slice of bread. On a clean griddle or in a skillet, melt 2 tablespoons butter and cook the sandwiches over medium heat until golden brown. Remove the sandwiches and add the remaining 2 tablespoons of butter to the skillet. Return the sandwiches to the skillet, flipping them to the other side. Cook until golden brown and crisp, and until cheese is melted. Slice in half and serve immediately.
  8. I Sometimes on the bottom of a page, it will say continue and when that happens, I can’t continue the recipe because my attachments are full. That happened just now so I will give you time to copy what I added today and will delete attachments sometime so I can complete the recipe later.
  9. Seafood Stuffed Bell Peppers: Ingredients: 6 Medium Bell Peppers, Cut The Tops Off 1/2 Stick Butter 1/2-lb. Lump Crab Meat 1/2-lb. Small Shrimp, Peeled & Deveined 1/2-lb. Crawfish Tails 2 Cloves Garlic, Minced 1/2 Cup Onions, Chopped 1/2 Cup Bell Pepper, Chopped 1/2 Cup Celery, Chopped I/4 Cup Fresh Parsley, Chopped 1 T. Cajun Seasoning A Couple Of Shakes Of Hot Sauce Salt, To Taste 1-1/2 Cups Italian Breadcrumbs 1 Cup Shredded Cheddar Cheese Directions: Wash bell peppers and remove seeds. Par boil them in a large pot of salted water for 10 minutes; drain and set aside. In a large skillet, sauté crawfish, shrimp, onions, bell pepper, garlic, and celery in butter for 10 minutes. Add crab meat, Cajun Seasoning, salt, and hot sauce; cook for 5 more minutes. Remove from heat and add bread crumbs and 1 cup of cheese and mix thoroughly. Stuff the par boiled bell peppers with this mixture and top with left over cheese. Place the stuffed peppers in a shallow baking dish, and add about a cup of water, or enough to cover bottom of dish. Bake at 350 degrees for 30 to 35 minutes. ***If you don’t have crawfish tails, this dish is just as good with only the shrimp and crab meat .
  10. I made this for Easter dinner and it was really good! The picture could be better. I didn’t get the carrots and mushrooms in the picture, but, they were good! Pictures Of Dinner & Garlic/Crockpot Today This morning, I put it all in the crockpot, along with the beef broth that I didn’t use yesterday, so it would stay moist. Easter Pork Shoulder: ***The Pork Shoulder Was 9-lbs. Chop up some onions and garlic, to taste; add to roasting pan. Add a bag of baby carrots/1 carton sliced fresh mushrooms; add to roasting pan. Pour 1-1/2-(32-oz.)-cartons Kitchen Basics Unsalted Beef Stock over vegetables. ***I saved the rest of the beef stock in the refrigerator. Lightly flour both sides of the pork shoulder. Add 4 T. Olive Oil in skillet; heat skillet. Add pork shoulder and lightly brown on both sides. Put rack in roasting pan and put pork shoulder on top of rack; FAT SIDE DOWN! Sprinkle some garlic salt and pepper over the pork shoulder. Put some onions and garlic on top of pork shoulder. Use 2 Pkg.s Lipton Onion Mushroom Soup Mix/rub over both sides of pork shoulder/use 1 Envelope per side! Bake in preheated 450 degree oven for 20 minutes; turn the heat down to 250 degrees. Bake for 7 hours, it WON’T hurt it, if it bakes longer! I will boil some potatoes for mashed potatoes on top of the stove instead of adding them to the roaster so they won’t turn brown! Gravy: I use this recipe every time when making beef or pork gravy, it always turns out great. When making beef gravy, Use McCormick Beef Gravy Mix. To Make Gravy: 1/2 Cup Blue Bonnet Margarine 1/2 Cup All Purpose Flour 2 Cans Campbell’s Beef Broth ***This Saves Me From Degreasing Broth! A Few Drops Of Kitchen Bouquet Add Some Whipping Cream If You Think It Needs Some! 2 Packages McCormick Pork Gravy Mix Salt & Pepper, To Taste Cut margarine into slices. In a large pan, melt margarine over low to medium heat. Slowly add in flour, constantly whisking to combine. After a few minutes, the flour will be incorporated into the butter. Pour in beef broth; stir. Add 2 packages McCormick Pork Gravy Mix, Whipping Cream, if needed and a dab of bouquet; salt and pepper, to taste; stir. I didn’t use milk for the mashed potatoes, I used Whipping Cream..it makes the potatoes better! I was planning on adding cream cheese to the potatoes, but, I forgot...they were still good! I added garlic! In the morning, I cooked garlic in the crockpot. This is my favorite way to make it! Crockpot Garlic: ***Use How Much Garlic You Want. Using a sharp knife, cut both ends off the full bunch of garlic. Using a paring knife, cut the garlic-(on the lines)-to make into cloves; peel. Put the garlic cloves on a piece of aluminum foil. When you have your desired amount of garlic cloves on the aluminum foil, squeeze some Olive Oil over the garlic cloves; sprinkle some Kosher Salt and some McCormick Coarse Ground Pepper on the garlic cloves. ***I Use Ketchup/Mustard Bottles & I Fill Them With Different Oils/Sauces/Etc. & Label Them So I Know What’s In Them! It makes it easier! Make a tent over the garlic cloves. Put in the crockpot and cook on low for 4-5 hours until tender.
