I don't think UTEP is the same as Central Florida or AZ state.  Huskers are returning almost everyone on defense.  As long as the offense doesn't put them in a bad spot I think they will handle the UTEP offense.  If there is a game to get a shutout this would be it and maybe Iowa.  

The front 3 will dominate vs the run BUT UTEP will probably throw 50 passes...that is going to be the issue.

They only averaged 31 passes per game at Austin Peay. Where are you getting this 50 idea?

Because I don't think they will be able to run at all, so I am just guessing they will start passing more.
