JJ Husker Posted September 5 Share Posted September 5 Sweet! My connection at the buffalo processing plant came through. Getting a whole bison ribeye roll and part of a box of tenderloins on Friday. Everything I’ve seen says to do it just like beef except that it will cook about 30% faster. Going to smoke it at 225 until it hits 120 internal then move it over to a very hot grill and reverse sear it to crust/caramelize the exterior until it’s about 130/135 internal. Supposedly it should have decent marbling but if it looks too lean I may baste it with some wagyu tallow as it smokes. I’m hopeful that it will be large enough that I can whack off about 4 good ribeye steaks to grill later before I smoke the rest of it. IDK, kind of excited….and nervous about screwing it up. But sounds like the only thing that can go wrong is overcooking it. If I don’t screw up, it should look like this… 3 Quote Link to comment
