1 pkg. frozen salad shrimp, thawed

Shredded Monterey Jack Cheese

Microwave at medium (50%) until melted, 1-1/2 to 2-1/2 minutes. Serve wtih salsa or picante sauce. If you don't care to use the microwave, you can bake this in the oven.

Spinach Dip In Rye Loaf:

1 (10-oz.) pkg. frozen chopped spinach, thawed and squeezed dry

1 cup mayonnaise

1/2 cup chopped green onions

1/2 cup minced fresh parsley

1/4 cup plain yogurt or sour cream

1/2 teaspoon fresh lemon juice

In medium bowl, mix together spinach, mayonnaise, onions, parsley, yogurt or sour cream, lemon juice, dill and pepper. Dip can be made 24 hours before serving. Cover and refrigerate. Cut 3/4-inch slice from top of 1 bread loaf. Cut and scoop out inside and tear into 1/2-inch chunks. Tear second loaf into chunks. Store in plastic bag if done ahead. To serve, fill loaf with spinach mixture; garnish with radish slices, and use bread chunks for dippping. Surround the dark loaf with Crudites of color and various shapes, such as steamed crisp-tender asparagus spears, sliced cooked beets, red, green and yellow bell pepper strips, snow pease and jicama sticks.

Bacon Cheese Mushrooms

25 mushrooms

3/4 cup mayonnaise

1 small onion, chopped

5 strips bacon, cooked and crumbles

Grated cheddar cheese

Remove mushroom stems. Wash and clean mushroom caps, pat dry. Mix mayonnaise, onion and bacon. Put a teaspoon of mixture in each mushroom cap. Put mushrooms in buttered pan and cover with grated cheese. Bake at 350 for 15 minutes.

Easy Sugared Bacon

1 lb. bacon slices

1 cup brown sugar

Rub or pat brown sugar into both slides of bacon slices. If you wish, you may cut each bacon slice into 3 pieces to make bite-sized pieces. Arrange bacon slices in Teflon-coated jellyroll pan and bake at 325 for 25 to 30 minutes, or until crisp. Serve as an appetizer or as an accompaniment for brunch.
