Roxy Posted October 25, 2007 Share Posted October 25, 2007 Taco Chex: 6 tablespoons margarine 1 teaspoon paprika 1 teaspoon chili powder 3/4 teaspoon seasoned salt 4 drops bottled hot pepper sauce 6 cups Corn Chex cereal 2 tablespoons grated American cheese Preheat oven to 350. Heat margarine in a 13x9-inch baking pan in oven until melted. Remove. Stir in seasonings; add Chex. Mix until all pieces are coated. Heat in oven for 20 minutes, stirring midway. Remove. Sprinkle evenly with grated cheese. Toss to coat all pieces. Spread on absorbent paper to cool. Yield: about 6 cups. Hot Nacho Dip: 2 lb.s Velveeta cheese 2 cans hot Hormel chili 2 cans diced green chilies Mix together and bake at 350 for 30 minutes or put in crockpot on high for 60 minutes. Serve with nacho chips.Reduce to low heat if you are having a party. **Note..I prefer to cook it on low to start with even if it takes longer..just allow more time. Sloppy Joes: 1 lb. ground beef 1 cup minced real onion 1 tablespoon brown sugar 2 tablespoons Worcestershire Sauce 1 tablesoon shortening 1 cup green pepper, finely chopped 2 tablespoons prepared mustard 1 cup catsup or chili sauce 1 tablespoon vinegar Brown meat slowly until meat is crumbly, but, soft. Drain grease off. Combine remaining ingredients with meat. Cover skillet and simmer slowly for 35 or 30 minutes. Makes 4-5 cups of filling. Serve on sandwich buns. You can melt slices of cheese on top of mixture too if you want. Barbecued Beef Slices: 13 slices roast beef 1/2 cup ketchup 1/4 cup brown sugar 2 tablespoons wine vinegar 1 teaspoon mustard 1/2 teaspoon Worcestershire Sauce Few drops Tabasco Sauce-optional 1 teaspoon horseradish Lay slices of beef in bottom of a greased shallow pan. Combine ingredients and pour over the meat slices. Cover pan with foil and heat 25-35 minutes in a moderately hot oven, 375. Chicken Rice Casserole: 1 box Uncle Ben's long grain and wild rice with wild seasoning 3 cups cooked, cut-up chicken 1 cup sliced fresh mushrooms 3 tablespoons chopped pimiento 1 cup chicken broth 1 can water chestnuts 1 can cream of chicken soup 1 can cream of mushroom soup chopped parsley Minced garlic-opt. Chopped onions-opt. Cook rice as directed on package and add other ingredients. Bake at 350 for 1 hour., uncovered. Sprinkle with slivered almonds. Scalloped Corn: 1 can cream-style corn 1/2 cup milk 1 cup cracker crumbs 1 egg, beaten 2 tablespoons butter Salt and Pepper to taste Mix all ingredients and pour into greased casserole dish.
