BLT Bites:

 

16 to 20 cherry tomatoes

1 lb. bacon, cooked and crumbled

1/2 cup mayonnaise

1/3 cup chopped green onions

3 T. grated Parmesan cheese

2 tablespoons snipped fresh parsley

 

Cut a thin slice off of each tomato top. Scoop out and discard pulp. Invert the tomatoes on a paper towel to drain.

 

In a small bowl, combine the rest of the ingredients; mix well. Spoon into the tomatoes. Refigerate for several hours.

 

Baked Spaghetti:

 

1 cup chopped onion

1 cup chopped green pepper

minced garlic-optional and to taste

1 tablespoon butter

1 can (28 oz.s) diced tomatoes, undrained

Cumin to taste-opt.

1 can (4 oz.s) mushroom stems and pieces, drained

1 can (2-1/4 oz.s) sliced black olives, drained

2 teaspons dried oregano

1 lb. cooked lean ground hamburger or 1/2 lb. hamburger and 1/2 lb. sausage

12 oz.s spaghetti, cooked and drained

2 cups (8 oz.s) shredded Cheddar cheese

1 can (10-3/4 oz.s) condensed cream of mushroom soup, undiluted

1/4 cup water

1/4 cup grated Parmesan cheese

 

In a large skillet, saute onion, green pepper and minced garlic in butter until tender. Add tomatoes, mushrooms, cumin, olives and oregano. Add ground beef or ground beef and sausage mixture. Simmer, uncovered, for 10 minutes. Add cumin to it also Place half of the spaghetti in a greased 13z9z2-inch baking dish. Top with half of the vegetable mixture. Sprinkle with 2 cup of cheddar cheese. Repeat layers.

 

Mix the soup and water until smooth; pour over casserole. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 for 30-35 minutes or until heated through. Top with red pepper flakes...optional.

 

 

Sarah's Treats

 

Boil together for one minute:

 

1 cup white syrup

1 cup sugar

 

Add:

 

1-1/2 cups peanut butter

6 cups cornflakes

 

Mix all ingredients together. Spread in a greased 9x13-inch pan. Cover with miniature marshmallows and chocolate chips. Return to oven for 3 to 4 minutes until the chips are melted enough to spread. When they are cooled after taking them out of the oven...cut in squares.

 

Vegetable Pizza

 

2 packages crescent rolls

1 8-oz. pkg. cream cheese, softened

1 cup Miracle Whip

2 teaspoons dill weed

1 pkg. Hidden Valley dressing

Assorted vegetables of your choice

8 oz. cheddar cheese, grated

 

Spread crescent rolls into a jelly roll pan to form a crust. Bake for 10 minutes at 375. While the rolls are cooling, mix the Hidden Valley dressing, dill weed and mayonnaise together. Spread this mixture on cooled crust. Spread assorted vegetables on top of this mixture and gently pat into the crust. Top with grated cheese. Refrigerate until served. Serve with crackers of your choice.

 

*Any combination of vegetables and cheese can be used.

 

Seven Layer Bars:

 

1/2 cup butter

1-1/2 cups crushed graham crackers

1 cup coconut

1-6 oz. pkg. chocolate chips

1-6 oz. pkg. butterscotch chips

1 cup nuts-your choice-we like pecans

1 can sweet condensed milk

 

Melt butter in bottom of 9x13-inch pan that has been sprayed with Pam. Layer all the rest of the ingredients as listed above, pouring milk over the top of layer. Bake at 350 for 15 to 29 minutes. Cut into squares while the bars are still warm.

 

Crockpot Chicken and Rice:

 

This is a great dish and handy to have on game days. Depending on how many you have to cook for..adjust amounts.

 

MIx together in a pan...1 can cream of mushroom soup and 1 can cream of chicken soup. You can use cream of celery soup in place of chicken soup. if you prefer. Add to the soup mixture-1/2 to 1 cup milk. Mix with Minute Rice...I don't measure...I just go by looks-....and 1 envelope Lipton's onion and mushroom soup mix.

 

Put a cut-up chicken in the crockpot...or chicken parts that you like the most. Sprinkle the chicken with garlic salt and pepper. Put minced onions and garlic on top of chicken.

Chocolate Dessert:

 

1 cup pecans

1 cup flour

1/2 cup butter

3 oz. cream cheese, softened

1 cup powdered sugar

8 oz. Cool Whip

2 pkgs. instant chocolate pudding

1 pkg. instant vanilla pudding

3 cups milk

1 tsp. vanilla

 

 

9x13" pan. 350 degrees...15 minutes-bake

 

Combine pecans, flour and butter, put in 9x13' pan. Bake at 350 for 15 minutes. Mix cream cheese (softened), powdered sugar and cool whip. Spread carefullly in pan..

 

Mix chocolate and vanilla pudding, millk and vanila. Beat with mixer until thick. Pour over cream cheese mixture. Top with Cool Whip and chopped nuts. Refrigerate.
