Ham Casserole:

 

2-1/2 cups cooked picnic ham

2 cans undiluted mushroom soup

1 cup milk

1 cup chicken broth

2 cups cooked macaroni

1 cup mushrooms, drained (opt.)

1 small diced onion

 

Mix together, put in 9x13' pan and refrigerate overnight. Let stand at room temperature one hour before baking. Cover with breaded crumbs and paprika. Bake at 350 for 1 hour. Let stand 10 minutes before serving.

 

 

Broccoli Casserole:

 

2-10 oz. pkgs. frozen chopped broccoli, cooked

2 cups rice, cooked

1-8 oz. jar Cheez Whiz

1/4 cup butter

1 cup chopped onion

1 cup chopped celery

1 can cream of chicken soup

1/2 cup milk

Salt and pepper to taste

 

Place broccoli and rice in a 2-quart casserole and stir in half the cheese. Melt butter, add onion and celery. Cook till tender, but, not brown. Stir in soup and milk and season to taste. Pour sauce over broccoli/rice mixture and mix well. Top casserole with remaining cheese and bake at 350 for 30 minutes. Chopped, cooked chicken can be added to this recipe. Optional: Add small can mushroom stems and pieces. Add buttered bread crumbs on top.

 

Dumplings:

 

2 cups flour

1 tsp. baking powder

1 T. shortening

1 tsp. salt

3/4 cup melted shortening

 

Mix dough and roll out on floured board. Roll out a little at a time, then cut in squares and drop into boiling broth; a few at a time, stirring continuously. Then cook for about 29 minutes. If you are putting this into boiling beef, put in small pieces of potato and onion, too.

 

Hamburger Casserole:

 

Preheat oven to 350.

 

1 lb. hamburger, raw

1/2 cup chopped onion

2 cans celery soup

8 slices Velveeta cheese

1 pkg. Tater Tots

 

In a 9x15-in pan, layer hamburger, onion and soup. Place cheese slices on top of this and cover with Tater Tots. Bake for 1 hour at 350.

 

Beef Nacho Cheese Dip:

 

1-2 lbs. hamburger

2 lbs. Velveeta Cheese

1 can cream of mushroom soup

1-8 oz. jar picante sauce

1 onion, diced

 

Brown and drain hamburger. Combine all other ingredients with hamburger in a crockpot, mix. Cook on low for several hours till heated through. Serve with tortilla chips or chips of your choice.
