I have a stellar Italian sausage recipe if you want it. So I’ve only ate hogs (sows only) under 120 lbs. Most of the older and heavier boars get ground into sausage. I’ve found that a lot of it is very similar in taste it is just leaner than farm pork. You wouldn’t be able to tell the difference between most of it especially if it’s off the smoker. most of the time I will cut and quarter it or if I’m tired I’ll have it done. It’s not that bad.
