There are some simple ways although I dunno if they use them. It could just be that if there are teammates in the class they’ll say if someone was gone. But they can also have forms that they have to get the teacher/professor to sign.

My guess would be accountability buddies. Most of these guys probably have classes with other teammates.

Underwater basket weaving classes aren't that big and are like 99% football players, so it's easy to tell who's missing.  :D

I'm assuming that the staff has someone assigned to check on players in each class. Players probably have a seating arrangement of some sort. If you aren't in your seat at the beginning of class, you're absent and....
