Iron-Cast Skillet Potatoes/Pics

I got nervous watching Nebraska play so I made brunch.  I have made potatoes like this before, but, this time I added a couple of things and it was better.

 

Iron Skillet Potatoes:

 

***Never wash an iron-cast skillet with dish soap or the food will taste like soap!  I rinse the skillet in hot water and pat it dry with a paper towel.

 

Ingredients:

 

Diced White Onions, To Taste
Russet Potatoes, Washed & Quartered-Leave Skins On
***You Want Enough Potatoes To Fill The Bottom Of Skillet
1 Packet Hidden Valley Dressing & Seasoning Mix
3 Tablespoons Creole Seasoning
Vegetable Oil
***1/4 Cup For Skillet & 1/4 Cup For Ziploc Bag

 

Wash potatoes; put potatoes on cutting board and quarter them: rinse again.

 

Put the potatoes in a Ziploc Bag; add 1/4 cup Vegetable Oil, Hidden Valley, diced onions and Creole Seasoning; shake to coat well.

 

Put 1/4 cup Vegetable Oil in iron-cast skillet; put the skillet in oven.  

***You do this because you want the oil hot when you put the potatoes in!

 

Preheat oven to 450 degrees.

 

Once the temperature has reached 450 degrees, put the potatoes in and bake for 30-40 minutes or until the potatoes are brown and crispy!
