Red Chile Sauce:

4 T. Oil

3 T. Flour

6 T. Red Chili Powder-(Hot)

4 cups Water Or Chicken Broth

2 Cloves Garlic, Minced

1 Tsp. Salt

Heat oil.

Combine chile and flour; add to hot oil; stir-(it will be a paste like consistency)-and cook for about a minute, continually stirring. (This cooks the flour and makes a roux of sorts.)

Add about 1/4 cup water, while stirring; let thicken to a paste like consistency and cook-(about 30 seconds)-add a bit more water (about 1/4 cup at a time)-Add more water, while stirring let thicken to a paste and cook. Until you've added about 3 cups. Should be the consistency of gravy, if too thick, add water-(it will thicken a bit as it cooks.)

 Add garlic.

Simmer-(low-med low heat)-For about 30 minutes. (Try not to let it boil.)

Then add salt & onion powder.

Add: Cooked meat of your choice, if you like.
