Any of you guys use a smoker?

I have thought about getting one, I would love to know if any of you use them and how it works for you. And just in case, i am talking about meat smokers.

 
Yes. I have a Masterbuilt electric smoker that I use weekly. I have made just about everything in there. If you like good BBQ nothings better than making your own.

Electric smoker, really? How easy is that to use? Like, how would go about doing ribs with that?

 
I have an electric smoker also, I find it easier to regulate the heat better. I have had propane also, but I think the electric smoker is easier to use.

 
Electric smokers are easy in that you don't have to constantly check on them. You punch in a temp. and it maintains that temp. All you have to do is add wood chips every couple hours.

 
I use a Brinkmann Smoke n' Grill

it's okay. The cheap ones have issues with keeping temperatures steady. I've made a bunch of modifications to mine and got it finally stable for the first time last month (owned it for 3 years now).

And if you are looking at a charcoal smoker, consider how easy it is to get to the charcoal/water pans. The cheap ones are sometimes a real pain. Also, check to make sure there is enough air vents for temp control and a decent thermometer. The thermometer that came with mine just simply said "warm, ideal, hot". What the hell temperature is 'ideal'?

An electric smoker would be nice...but consider the weather. Electricity and rain don't mix (and it always seems to rain/snow when I smoke)

Gas is also handy with keeping a steady temperature, but of course you have to worry about the fuel going out.

If you want a simple smoker that works great, just use a large charcoal grill. BBQing is all about low-and-slow with indirect heat. Coals on one side of the grill, meat on the other. Then just add your chips/chunks. Check out how these guys do it:

Just got one this year. Did some research and the best advise is to get either an electric or propane fueled unit. With charcoal it is hard to regulate and you want to keep the temp between 180 and 200 degrees. If you have a famous daves near you they occasionally sell their pre-seasoned racks 2 for $20.00. They turn out great. It may still take some experimentation but not a lot.
