BACKYARD BBQ AND TAILGATE RECIPES:

Nice Website.

Talking Tale Gate food.

Here is something I will be making.

Fresh jalapeño peppers from the garden. Cut in half and deseed. Fill with cream cheese and wrap with bacon. Grill till bacon is done.

DANG...those are good.

It's game time and I got the BBQ going for a party tonight.

Have BBQ chicken on for lunch and pulled pork for tonight.

I also am experimenting. I'm smoking a venison neck roast.

Anyone cooked one of these before?

I have the feeling it's either going to be awesome or it's going in the trash.

How did the venison turn out?

Actually dang good. I was actually surprised. The people who I served it to actually were complimenting how good the "beef" was. When I told them it was actually Venison, they were very surprised.

This is the basic recipe I used.

I used a neck roast. I didn't inject it and it was on the smoker for about 8 hours. After about 4 hours I wrapped it in aluminum foil with about a half cup of beer to add moisture.

I left it on the smoker till the internal temp was over 195 so it would fall apart.
