Another recipe from my friend..this is her favorite:
Chicken or Turkey Tetrazzini:
1/2 cup butter
1/2 cup all-purpose flour
1/2-1 tsp salt
1/2 tsp pepper
1 cup chicken or turkey bouillon or broth
1 cup evaporated milk
2 cups cubed chicken or turkey
1 can drained sliced mushrooms
1/2 cup shredded mozzarella
1/2 cup grated Parmesan
1 pkg 7-8 ounce spaghetti, cooked, drained
Preheat oven to 350; melt butter in sauce pan, add flour and seasonings, cook until smooth and bubbly. Remove from heat, add broth and milk, stir well. Heat to boiling stirring constantly; add chicken or turkey, mushrooms, spaghetti and mix well. Pour into a 2 quart casserole dish (ungreased). Sprinkle cheeses on top. Bake uncovered 30 minutes.
