Creamy White Chicken Chili:
Ingredients:
1-lb. Boneless, Skinless Chicken Breasts, Cut Into 1/2-in. Cubes
1 Medium Onion, Chopped
1-1/2 Tsp. Garlic Powder
1 T. Canola Oil
2-(15-1/2-oz.s Each)-Great Northern Beans, Rinsed & Drained
1-(14-1/2-oz.)-Can Chicken Broth
2 Cans-(4-oz.s Each)-Chopped Green Chiles
2 Tsp. Salt
1 Tsp. Ground Cumin
1 Tsp. Dried Oregano
1/2 Tsp. Pepper
1/4 Tsp. Cayenne Pepper
1 Cup-(8-oz.s)-Sour Cream
1/2 Cup Heavy Whipping Cream
Tortilla Chips-(Opt.)
Shredded Cheddar Cheese-(Opt.)
Sliced Seeded Jalapeño-(Opt.)
Directions:
In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink.
Add the beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
Remove from the heat; stir in sour cream and cream.
If desired, top with tortilla chips, cheese and jalapenos.
