I made this for Easter dinner and it was really good!  The picture could be better.  I didn’t get the carrots and mushrooms in the picture, but, they were good!

This morning, I put it all in the crockpot,  along with the beef broth that I didn’t use yesterday, so it would stay moist.

Easter Pork Shoulder:

***The Pork Shoulder Was 9-lbs.

Chop up some onions and garlic, to taste; add to roasting pan.

Add a bag of baby carrots/1 carton sliced fresh mushrooms; add to roasting pan.

Pour 1-1/2-(32-oz.)-cartons Kitchen Basics Unsalted Beef Stock over vegetables.  

***I saved the rest of the beef stock in the refrigerator.

Lightly flour both sides of the pork shoulder.

Add 4 T. Olive Oil in skillet; heat skillet.

Add pork shoulder and lightly brown on both sides.

Put rack in roasting pan and put pork shoulder on top of rack; FAT SIDE DOWN!

Sprinkle some garlic salt and pepper over the pork shoulder.  

Put some onions and garlic on top of pork shoulder.  

Use 2 Pkg.s Lipton Onion Mushroom Soup Mix/rub over both sides of pork shoulder/use 1 Envelope per side!

Bake in preheated 450 degree oven for 20 minutes; turn the heat down to 250 degrees.

Bake for 7 hours, it WON’T hurt it, if it bakes longer!

I will boil some potatoes for mashed potatoes on top of the stove instead of adding them to the roaster so they won’t turn brown!

Gravy:

I use this recipe every time when making beef or pork gravy, it always turns out great.  When making beef gravy, Use McCormick Beef Gravy Mix.

To Make Gravy:

1/2 Cup Blue Bonnet Margarine
1/2 Cup All Purpose Flour
2 Cans Campbell’s Beef Broth
***This Saves Me From Degreasing Broth!
A Few Drops Of Kitchen Bouquet
Add Some Whipping Cream If You Think It Needs Some! 
2 Packages McCormick Pork Gravy Mix
Salt & Pepper, To Taste

Cut margarine into slices.

In a large pan, melt margarine over low to medium heat.

Slowly add in flour, constantly whisking to combine.  After a few minutes, the flour will be incorporated into the butter.

Pour in beef broth; stir.

Add 2 packages McCormick Pork Gravy Mix, Whipping Cream, if needed and a dab of  bouquet; salt and pepper, to taste; stir.

I didn’t use milk for the mashed potatoes, I used Whipping Cream..it makes the potatoes better!  I was planning on adding cream cheese to the potatoes,  but, I forgot...they were still good!  I added garlic!

In the morning, I cooked garlic in the crockpot.  This is my favorite way to make it!

Crockpot Garlic:

***Use How Much Garlic You Want.

Using a sharp knife, cut both ends off the full bunch of garlic.

Using a paring knife, cut the garlic-(on the lines)-to make into cloves; peel.

Put the garlic cloves on a piece of aluminum foil.

When you have your desired amount of garlic cloves on the aluminum foil, squeeze some Olive Oil over the garlic cloves; sprinkle some Kosher Salt and some McCormick Coarse Ground Pepper on the garlic cloves.

***I Use Ketchup/Mustard Bottles & I Fill Them With Different Oils/Sauces/Etc. & Label Them So I Know What’s In Them!  It makes it easier!

Make a tent over the garlic cloves.

Put in the crockpot and cook on low for 4-5 hours until tender.
