This gal from Colorado has a couple cookbooks but my wife and her friends are obsessed with her recipes off Instagram and Pinterest:

We've made a couple of her recipes and they've all turned out super good.

We made this One Pot Broccoli Cheddar with Dumplings:

And since we're on our own for Thanksgiving this year, my wife has decided to do a full Half Baked Harvest Thankgiving menu including breakfast, the big meal itself, and cocktails. 

 
Not sure how good the recipes are but her food photography makes it look really damn good. Will have to try some of these.
