I made these for the first time last night from my mom's chocolate chip cookie recipe. They're not actually healthy, but I replaced all of the processed, refined things (except the 1 cup of white flour) so they're slightly less unhealthy. They're still around the same amount of calories but they have better fats, higher fiber, and higher nutrition. I also used all organic stuff but that's probably too obsessive for most people.
Ingredients:
1/3 cup unsalted butter
1/3 cup virgin unrefined coconut oil
1 egg
1 tsp pure vanilla extract
1 cup turbinado sugar
1 cup unbleached white flour
1/2 cup white whole wheat flour or whole wheat pasty flour
1/2 tsp baking soda
1/2 tsp fine sea salt
1 cup dark chocolate chips
Directions: The coconut oil should have a crisco-like consistency, so if it's in liquid form refrigerate it for awhile (this won't be an issue if making these in the winter). Preheat oven to 375. Beat the wet stuff together. Mix the dry stuff (except the chips) with a spoon or something. Beat all the crap together. Mix in the chocolate chips with a spoon or something. Throw the dough onto a baking sheet like a normal person would (into round lumps). Bake for 8 minutes. Lick the beaters while it's baking. Eat the cookies after they've cooled down enough to not melt your lips off.
Makes 24-30 cookies, which are 124 calories each.
