I have this recipe and I have another one..but..it calls for a crockpot and it takes all day to cook..not sure how soon you need it.

Seasoned Pork Loin Roast:

In the summertime..grill it if you want and in the winter time...roast it

2 teaspoons garlic salt

2 teaspoons garlic-pepper blend

2 teaspoons lemon-pepper seasoning

1 boneless rolled pork loin roast (about 5 lb.s)

BASTING SAUCE:

3 cups water

2 tablespoons lemon juice

1-1/2 teaspoons minced onion

1/2 teaspoon garlic salt

1/2 teaspoon garlic-pepper blend

1//2 teaspoon lemon-pepper seasoning

1/2 teaspoon red pepper flakes

1/2 teaspoon grated lemon peel

Combine the garlic salt, garlic-pepper and lemon-pepper; rub over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325 for 1-1/2 to 2 hours or until a meat thermometer reads 160.

Meanwhile, in a large saucepan, combine the basting sauce ingredients. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes. Brush over roast occasionally while baking. Let the roast stand for10 minutes before slicing.

 
I'll save this one I already have it in the oven right now. I just filled the roast pan up about halfway with water put a little soy sauce in there and seasoned the meat with Cookies seasoning and a little garlic salt. I'll let you guys know how it turns out. :thumbs

Welcome home BRI. I have found that if I use a meat thermometer when roasting posk it really helps to keep from over cooking (like Mom used to do). This way the meat stays juicey and flavorful. I also like these two sauces with pork loin, 1) a combo of Terriaki sauce and Mrs. Butterworth's maple pancake syrup, and 2) horseradisch sauce (looks like mayo not the plain horseradisch) and apple sauce. Both of these are quite tasty. I also like sweet potatoes cut like french fries and then deep fried. You may have run into these when you were on your cruise, they haven't quite caught on in the mid-west yet. Anyway, Bon Apetite, mon ami.

:lol: Cookies is a barbeque seasoning. :thumbs The roast turned out great! Very tender and had just the perfect amount of flavor to it. The wife isn't crazy about pork though.
