My mom is not with us anymore...I have many great memories of her..she made the best potato salad and I will share it with you...I eyeball ingredients when I make it.
Mom's Potato Salad:
4 or 5 peeled russet potatoes
4 or 5 eggs
onions, cut in small pieces
green peppers, cut in small pieces
celery, cut in small chunks
sliced green olives
Cheddar Cheese, cut up
1/2 tsp. or 1 T. sandwich spread
sweet pickles, cut into small chunks-can use pickle relish if you want
1/2 tsp. mustard
Miracle Whip
Ground Black Pepper
Paprika
Boil potatoes and cut into small bite sized pieces. Put potatoes in serving bowl. Add desired mayonnaise to warm cut up potatoes. Sprinkle black pepper over potatoes; stir well.
Take shells off the eggs and mash eggs with a potato masher.
In seperate bowl, add smashed eggs, onions, green peppers, celery, pickle relish or dills, Cheddar Cheese, green olives, mustard, and sandwich spread; mix well.
Add to potatoes in serving bowl; mix well and sprinkle top of potato salad with paprika. Refrigerate for a few hours.
