These are one of my favorite cookie recipes. I made them yesterday and used butterscotch chips. Sometimes I use half butterscotch chips and milk chocolate chips, if I have them both on hand or you can use either/or. I also have put raisins in them if I have them on hand.
Oatmeal Butterscotch Cookies:
1 Cup Butter, Softened
3/4 Cup Sugar
3/4 Cup Brown Sugar
2 Eggs
1 Tsp. Vanilla
1-1/4 Cups Flour
1 Tsp. Baking Soda
1 Heaping Tsp. Ground Cinnamon
1/2 Tsp. Salt
3 Cups Quaker Oats
1 Pkg. Butterscotch Chips
Preheat oven to 375 degrees.
In a large mixing bowl, beat butter, white sugar and brown sugar together.
Add eggs and vanilla; beat well.
Add flour, baking soda, cinnamon and salt; mix.
Add butterscotch chips and Quaker Oats on low, until combined.
Roll into balls.
Line cookie sheets with parchment paper and put the cookie dough on them.
Bake for 8 minutes in preheated 375 degree oven.
****I let the cookies cool and them put them in a large round container and separate the layers of cookies with wax paper.
