Potato Cakes:
2 Cups Mashed Potatoes
***I Boiled The Potatoes, Put In A Mixing Bowl, Added Butter & Milk; Mashed
1 Cup All-Purpose Flour
Green Onions, Diced
***Recipe Called For 1 Onion, Diced, But, I Used Green Onions Instead-(4 Or 5)
1 Egg
***I Might Use 2 Eggs Next Time
Paula Deen's House Seasoning, To Taste
Ground Black Pepper, To Taste
Vegetable Oil, Just Enough To Slightly Cover The Bottom Of The Pan
***Recipe Called For 1/2 Cup, But, That Is Way Too Much Oil!
1 Pkg. Hidden Valley Salad Dressing Mix
Mix mashed potatoes, flour, green onions, egg, ground black pepper, Paula Deen's House Seasoning in a bowl until batter consistency.
Heat vegetable oil in a skillet over medium heat.
Form the potato mixture into potato cakes.
*** I used an ice cream scoop to form the potato cakes.
Drop potato cakes into hot oil.
Cook until the potato cakes are golden brown, about 6 minutes per side; see note on bottom!
Remove with a slotted spoon and drain on a paper towel-lined plate.
Repeat with remaining batter.
***I sprayed a spatula with non-stick spray when turning them over. However, next time I will continue to use an ice cream scoop, but, will wet my hands and place a scoop of the mixture onto my wet hand and then gently flatten them into patties. Spray spatula with non-stick cooking spray to turn the potato cakes over.
The next time I make these, I will prepare them ahead of time and refrigerate them for a few hours; then form them into patties. That way they shouldn't be as hard to form into patties and not stick so much.
Paula Deen's House Seasoning:
1 Cup Salt
1/4 Cup Black Pepper
1/4 Cup Garlic Powder
Mix ingredients in a bowl and store in an airtight container for up to 6 months.
***I Put It In A Shaker For Convenience Such As An Empty Parmesan Cheese Shaker.
***OPT. Add Onion Powder To Your Liking
