Salmon Bake with Pecan-Crunch Coating:
4 salmon fillets
1/4 tsp salt
1/8 tsp. pepper
2 tablespoons Dijon Mustard
2 tablespoons butter, melted
1-1/2 tablespoons honey
1/4 cup soft bread crumbs
1/4 cup finely chopped pecans
1 tablespoon chopped fresh parsley
Sprinkle salmon with salt and pepper; place skin side down, in a lightly greased 11x7x1 1/2 inch or 9 inch square baking dish. Combine mustard, butter, and honey; brush over salmon. Combine crumbs, pecans, and parsley, spoon across top of salmon. Bake, uncovered, at 450 for 12-15 minutes or until fish flakes easily when tested with a fork.
***You might want to let the salmon marinate in the mustard,butter, honey combo, so that you get more flavor into the salmon
