Summer Cocktails

Tom Collins is a favorite, 2 parts gin, a good squeeze of lemon juice, pinch of sugar, splash of club soda, top with a wheel of lemon.

I've always found gin/vodka tonics to be very refreshing too.

Another favorite summertime drink horchata and spiced rum. Horchata is a sort of cinnamon milk type mexican drink, you can buy it at mexican stores. Pour some over some ice and top it with captain morgan.

 
El Diablo

About 1 cup ice cubes

1/4 cup (2 ounces) Patron reposado tequila

6 tablespoons (3 ounces) ginger beer -or- ginger ale

1 teaspoon crème de cassis

1 lime wedge

In a highball glass, combine ice and tequila. Top with ginger beer, then slowly pour in crème de cassis (it will settle to bottom). Squeeze lime wedge over, then drop wedge into drink and serve it up.

 
"mocktails"--heh. That's a good one.

I'm partial to Cape Codders. Can mix them up by the pitcher:

3 parts cranberry juice

2 parts vodka

a lime wedge in each glass.

3 shots of Vodka

3 fingers of Iced Tea

3 fingers of Lemonade

Serve on ice

I'll be trying that Horchata cocktail, thanks GMoose.

Dark and Stormy

2 oz Gosling's Black Seal rum

3 oz Barrit's ginger beer

lime wedge for garnish if desired

Vodka Tonic (too common to require a recipe, right?)
