What is it about bacon?

I converted to Turkey bacon around 2005 and don't each pork bacon anymore.

Although, I do render thick cuts of pork bacon into bacon lard on the reg.

Not only for taste, but many oils like vegetable oil, corn oil, peanut oil, etc are hydrogenated oils and not as healthy as bacon lard.

Since I make runny refried beans every week, bacon lard is a flavor game changer.

Other things you can do with bacon lard...

Shmear it on steaks before grilling (thank me later)
Use it when making cornbread, biscuits, country gravy, and fried cabbage. It is also delicious to shmear it on potatoes before you bake them in the oven.

The reason for this thread.

Tuesday, as I am leaving for work, I open the garage door and immediately there is a strong smell of somebody cooking bacon 🥓. The air must have been just right because I usually don’t smell whatever the neighbors may be cooking. I wasn’t hungry before that but I instantly had to have some. Bastards. So I picked up a bacon breakfast burrito on my way to work.
 
Also…..

You can purchase Wagyu Beef Tallow (spray can or tub) from South Chicago Packing on Amazon.
I like the spray when I need to baste something I am smoking like a turkey or brisket or anything that is too lean and prone to drying out. The tub (wagyu tallow or Bacon Up) is handy to use on the Blackstone.

My wife doesn't eat beef or pork, only poultry and seafood. We had turkey bacon for a long time but she finally gave up and went back to regular bacon because the turkey bacon "sucks" 🥓🥓🥓

Nothing better than Wright Brand double smoke thick cut if you’re going the grocery store route in my opinion.
I have used Wright Brand "hickory real world smoked thick bacon" for lard many times, and it is wonderful.

Having said that, there is better. It's Simple Truth Brand "uncured hardwood smoked bacon". It is packed with less water than Wright Brand. Less water makes better bacon lard.

Yeah, if they aren’t curing it there’s no water/brine injected. Most of the water runs out when smoked but you never get all of it.

In general for me….i avoid liquid smoked. Real smoke has a better flavor. It’s getting tougher to find because liquid is easier to control the outcome (cheaper).
