Cheesy Twice Bakes:

6 large potatoes

1-(8-oz.) pkg. Cream Cheese, softened

1 stick butter, softened

1/2 cup Shredded Cheddar Cheese or Pepper Jack Cheese

Salt and Pepper to taste

Green Onion or Scallions, sliced

1/4 cup Shredded Cheddar Cheese

Wash & bake potatoes. Slice in half (reserve skins), scoop out insides & mix together cream cheese, butter, cheddar cheese, salt & pepper. Stuff mixture back into potato skins, top with remaining cheese & green onions. Bake 400 degrees for 20 to 30 minutes.

****Another way to make these, is to add Garlic Powder to taste and use Sour Cream instead of Cream Cheese and top with cooked, crumbled bacon.
