Chicken & Broccoli Casserole:
2 boxes of frozen broccoli
2 eggs
3 tablespoons chopped green onions
1 can cream of celery soup
1 cup mayonnaise
8 oz. grated cheddar cheese
1 small box of Ritz crackers
4 chicken breasts - cooked and cut into pieces
Cook broccoli about two minutes, or until thawed and drain well.
Combine eggs, green onions, chicken, cream of celery soup, mayo, and cheese.
Mix in broccoli.
Pour all ingredients in a greased casserole dish.
Top with crushed Ritz crackers, sprinkle some cheese on top.
Bake for 30 minutes at 350.
*When re-heating leftovers, sprinkle more crushed Ritz crackers on top after heating
