Chili Seasoning

Sort of a tough one, and I’ll assume you are talking about red chili, not green chili. Will also assume you’re making it pretty mild so the wife will eat it.

Typically I put all my seasoning/flavor in while making it. I really like the flavor of Chili-O packaged seasoning. It isn’t particularly spicy though and it prob wouldn’t be as good added after the fact. To up the heat, I add jalapeños, cayenne pepper and tabasco (or other pepper sauce). Too much tabasco will give it a vinegar flavor which may not be wanted. I guess my best suggestion to make it spicier would be red cayenne and/or white pepper. Shouldn’t change the flavor profile too much but will add spice.

I would stay away from seasoning spices.

I recommend getting a small can of this (7oz & under $2):

Just heat a small saucepot separately with half the can and it's sauce. When its warm mix a little into into your bowl of chili and enjoy.

If you really like it, heat up the entire can lol. It's a staple in Texas & Mexico and used with tons of recipes for Tex-Mex or Mexican dishes. It's always in my chili unless I use a can of diced green chilis instead.

I have the same problem. To keep it simple, I just add some pickled jalapeños. But, I’m sure there is something more creative. The chipotle peppers are an interesting idea. Basically the same thing but smoked and the adobo sauce.
