Creole Roasted Potatoes:
Preheat oven to 450 degrees.
Wash potatoes, put them in a cutting board; cut potatoes into slices and slice them again into thin strips; wash them again in colander. You can leave the skins on or peel them. I have made them both ways, but, I prefer leaving the skins on!
***You can leave them in slices or cube them.
Put the potatoes in a large mixing bowl and add the following; stir.
Diced Purple Onions-(Used Half Of A Large Purple Onion
1 Tsp. Christopher Ranch Minced Garlic
Black Pepper, To Taste
3 T. Tony Chachere’s Original Creole Seasoning
2 T. Olive Oil
When the oven has reached 450 degrees, put the potatoes in the iron-cast skillet and bake for 30-35 minutes.
