Football Munchie:
1 lb. Ground Beef
1-(12-oz.) Jar Chunky Salsa
1 Cup Frozen Corn, Thawed & Drained
3/4 Cup Miracle Whip
***DO NOT SUBSTITUTE MAYONNAISE FOR MIRACLE WHIP!
1 T. Chili Powder
1 T. Penzey’s Bold Taco Seasoning
1 Tsp. Dried Pepper Flakes
2 Cups Crushed Tortilla Chips
2 Cups Shredded Colby/Monterey Jack Cheese, Divided
***Or Use Pepper Jack Cheese
***Use More Or Less of cheese, depending on how much cheese you like.
Preheat oven to 350 degrees.
Brown ground beef; drain.
Stir in salsa, corn, Miracle Whip & Chili Powder. Layer half of the meat mixture in a 2 quart casserole or 8x8-in. Pyrex Dish; add crushed chips, half of the cheese; repeat layers, ending with cheese
Bake 20 minutes or until thoroughly heated through and cheese is melted.
Top with shredded lettuce. sliced jalapenos and chopped tomatoes, if desired.
***You can serve lettuce, tomatoes, sour cream & guacamole on the side.
