1st and last time I buy Soy Milk..no matter if it's on sale for $1/gallon.

 
I've grilled eggs using a muffin pan. Just use non-stick spray on the pan, add beaten eggs to each cup, and whatever you want cooked in the eggs (green peppers, onion, bacon, ham, cheese...ect.)

 
I have no idea if I am too late to help you or not. I have never grilled eggs..but..I did find these recipes for you and I do have a grill book that I could of looked at..but..didn't know if I could post all the ones I may have found in the book, in time for you to use.

Eggs On The Grill:

Ingredients:

12 eggs

salt & pepper

bacon, grilled hot links, etc.

Cheese Slices

Preheat an outdoor grill for medium high heat & lightly oil grate.

Cut all holes of a muffin pan with cooking spray & crack an egg into each hole. Salt & pepper each egg.

Place on grill & grill over medium high heat for 2 minutes, or to desired doneness.

Add some grilled bacon, hot links sliced up, grilled ham sliced and put some cheese on top to melt.

Yes, you can grill omelets. Get a good griddle or a grill safe pan, and you'll have the best tasting omelet ever!

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

1 dozen eggs

1/2 red bell pepper

1/2 green bell pepper

1 cup cheddar cheese

16 oz ham steak

2 tablespoons milk

1/2 small onion

1/4 cup mushrooms chopped

2 tablespoons olive oil

butter

salt and pepper

Preparation:

Preheat grill. Lightly brush bell peppers, ham and onion with olive oil. Place on grill and cook until everything has a light char and vegetables start to soften. Remove everything from grill and dice. Mix three eggs with 1 tablespoon of milk until smooth and even. Melt some butter in a hot omelet pan and add eggs. When the eggs start to lift off the pan in the middle flip. Add 1/4 of the ham, peppers, mushrooms, onion and cheese. Season with salt and pepper. Fold and continue cooking until eggs are no longer runny. Repeat process until you have 4 omelets.

2 large eggs, any variety

2 links breakfast sausage, any variety; I prefer "Farmer John" brand

1 oz, or so, of shredded cheese; I use Kraft's "Mexican cheese blend," but your choice in cheese isn't critical

1 medium red potato, diced into 1/4" squares

1/4 white onion, diced

1 jalapeno pepper diced

1 slice sourdough French bread, but use any type of bread, according to taste

Salt and pepper, to taste

Dried oregano, to taste

Butter or margarine, to taste

Cooking spray, any brand will work, but we prefer "PAM"

Preheat grill, spray with cooking spray. While grill is heating, dice potato, onion and pepper; reserve and set aside. Break eggs into bowl, add shredded cheese, salt, pepper and oregano, to taste. Note: It takes about 10 minutes for the grill to achieve grilling temperature, so that provides ample time to dice and prepare ingredients.

When grill is ready, add potato and spread evenly over about 1/2 of the left side of the grill. After cooking about 5 minutes, or until grill marks start to appear, add sausage links to right of the potatoes. Cook another 2 minutes, or until grill marks begin to appear on sausage, and add diced pepper and onion mixture to potatoes. Mix pepper and onion pieces with potato pieces and spread evenly over the left side of grill.

This would be an excellent time to put the piece of toast into the toaster. I prefer my toast medium, which takes about 2 minutes to toast. When toast is ready, evenly spread butter or margarine over the toast, cut in half and set aside.

Add egg mixture "around" the sausage links. Cook for about 4 minutes, until the eggs are done according to your taste. Remove from grill, add salt and pepper, according to taste to the potatoes O'Brien, and serve immediately.

Equipment:

Gas Grill: preheat to medium-hot heat)

Round non-stick cake pan

Fitting lid or aluminum foil

Heavy duty oven mitts (silicone or fabric that can take the heat)

Ingredients:

cooking spray

1 cup egg whites or egg beaters

3/4 cup left over grilled summer squash, onions and bell peppers

1/4 cup feta or Gorgonzola cheese, divided

2 sprigs basil (leaves pull off and torn into pieces

salt and pepper to taste

Directions

1. Preheat grill to medium or high (if you are cooking on a small grill)

2. Spray non-stick cake pan with cooking spray

3. Add egg whites or egg beaters to cake pan

4. Sprinkle veggies and 1/2 of the feta cheese (2 Tbsp; 15g) on top evenly

5. Cover and place on the grill where the pan will be exposed to even, and preferably indirect, heat

6. Take a quick shower (5-7 minutes; this time will vary based on the heat of your grill and cake pan size)

7. Go outside and pull your meal off the grill

8. Sprinkle the remaining cheese and 1/2 basil on one side of the cooked omelet; fold the omelet over

9. Transfer to a plate and top with the remaining basil; salt and pepper as desired.
