Mexican Chicken:
2-lbs. Chicken Breasts
1 Packet Taco Seasoning
Salt, To Taste
1-(10-oz.)-Can Enchilada Sauce
***Or Make Your Own
1 Cup Cheddar Cheese, Shredded
***Or Mexican-Style Cheese
6 Green Onions, Chopped
Rinse chicken; pat dry.
Cut chicken breasts into cubes and place in bowl.
Sprinkle Taco Seasoning and salt-(to taste)-over chicken and mix.
Sauté cubed chicken in skillet until done.
Add Enchilada Sauce and stir well.
Pour chicken mixture into greased 9x13-in. baking dish.
Sprinkle cheese over too and bake at 350 degrees for 10-20 minutes until bubbly.
Scatter chopped green onions over top.
***Sliced black olives would be good too with the green onions or jalapeños-(whatever you like.)
Serve with your favorite rice, Refried Beans and a salad.
***I think if you added Fritos/Doritos/Tortilla Chips scattered over the top after it bakes, would be good too.
Maybe put some guacamole, salsa and sour cream on top
