Potato Pancakes:

6 Cups Frozen Shredded Hashbrowns

1/2 Cup Chopped Scallions

6 Eggs

1/2 Cup Flour

1 Cup Shredded Cheddar Cheese

Mix the ingredients; form into patties or make them flat in the pan with a spoon and fry in 1/2-in. oil until crispy; turn once; drain on a paper towel-lined plate.
