  1. Cheese Fondue

     

    1/2 c. milk

    1/4 c. white wine

    1/2 t. Worcestershire sauce

    1/4 t. dry mustard

    1 c. mayo

    2 c. cheddar cheese

    1 1/2 c. Swiss cheese

     

    Combine all ingredients in sauce pan or electric fondue pot. Warm slowly to melt the cheese & stir often. Serve with veggies or cubed bread.

     

    Easy Cheesy Fondue

     

    1/2 pound Swiss cheese, shredded

    3 small cans of condensed cheese soup (Campbell's is best)

    3 garlic cloves, crushed

    1/4 to 1/2 cup beer

     

    Mix first 3 ingredients together and heat in your fondue pot,

    stirring occasionally until smooth and heated. Gradually add

    beer until it is the consistency you prefer. When fully heated

    you can keep warm, stirring occasionally or just reheat when

    necessary. Serve with French bread cubes for dunking.

  2. I have alot more recipes for cheese dip..but, I have to get cleaning the house and will post them later or some other day-if you want them that is. Also a member mentioned that I post my top 3 favorite recipes. That would be hard for me to choose...I have alot of great recipes. However..if you tell me what kind of recipes you like...I can do that:) Here are just a few cheese dip recipes that I have. I haven't made some of them.

     

     

     

    Mexican Cheese Dip:

     

    2 (8-oz.) pkgs. cream cheese

    2 (8-oz.) cartons sour cream

    1 (8-oz.) package sharp white cheese grated

    1 (8-oz.) package sharp yellow cheese, grated

    1 onion, diced

    3-4 green peppers, diced

    2-4 tomatoes, diced

    1 jar medium or hot salsa

    2 bags nacho or corn chips or crackers

     

    The night before, mix cream cheese, sour cram and onion. Spread on a round glass tray. Refrigerate overnight. The next day, spread yellow cheese, then white cheese, then green peppers in concentric circles on top of mixture. Mix tomatoes with salsa and put in the middle. Chill and serve with chips or crackers.

     

    Mexican Dip:

     

    2 (8-oz.) pkgs. cream cheese (soft)

    1 green pepper (diced)

    1 onion (diced)

    2 tomatoes (diced)

    1 jar salsa (mild, hot or what you like)

    2 cups Monterey Jack cheese or Mexican mix cheese

     

    When cream cheese is soft, spread on a round flat dish. Add diced tomatoes, peppers, onions and salsa on top; sprinkle with shredded cheese. Refrigererate until ready to serve. Serve with nacho or Tostitos chips.

     

    Good Dip-I have made this and like it: Use more of ingredients if you want

     

    1-1/2 lbs. hamburger

    1 onion, diced

    1/2 cup green pepper, chopped

    1 small can green chiles

    1 can cream of mushroom soup

    1 can tomato soup

    1/2 lb. Velveeta cheese, diced

    5 oz. longhorn cheese, diced

    Minced garlic

     

    Brown hamburger, add onion, green pepper, chilies and garlic. Drain grease off. Mix 2 soups together and add to hamburger mixture. Simmer at least an hour. I make this in a crockpot. I just brown the hamburger, drain grease off, I then put all the ingredients in the crockpot and stir well and cook on low for several hours. Serve with nachos or chips or your choice.

     

    Super Nacho Dip:

     

    1 lb. browned hamburger with onion

    1 small jar of green chiles

    1 small jar mile or hot taco sauce

    1 large can refried beans

    1 ot 2 cups grated sharp Cheddar cheese-I would use Mexican Cheese

    1 small carton sour cream

     

    Put beans on bottom of a 9x12-inch pan, next hamber and onions, chiles and taco sauce. Top with grated cheese. Bake at 325 until it bubbles, remove from oven. After it cools slightly, spread with sour cream.

     

    Nacho Cheese Dip

     

    1 green bell pepper, chopped

    1 onion, chopped

    1/2 stick butter

    14 1/2 oz. can chicken broth

    2 tablespoons flour

    8 oz. Monterey Jack with jalapeno grated

    1/4 lb. Velveeta, grated

     

    Saute onion and pepper in butter for 5 minutes. Fold in flour over low heat. Stir until thickened. Add chicken broth and stir. Add cheeses; stir untl melted, over low heat.

     

    Nacho Dip:

     

    1 lb. Velveeta cheese

    1 can cream of chicken soup

    1/2 can Old El Paso relish

     

    Cube cheese and melt. Add soup and relish. Heat thoroughly. Serve with nacho chips.

    Spinach Dip:

     

    Original Ranch Spinach Dip

     

    1 container 16 oz sour cream

    1 box (10 oz) frozen chopped spinach, thawed and aqueezed dry

    1 can (8 oz) water chestnuts, rinsed, drained and chopped

     

    1 packet (1 oz) Hidden Valley Original Ranch Seasoning & Salad Dressing Mix

    1 loaf of your favorite round bread (Hawaiian or French)

    Fresh vegetables, for dipping

     

    1. Stir together sour cream, spinach, water chestnuts, and seasoning and sald dressing mix. Chill 30 mins..

     

    Olive Gardens Spinach and Artichoke Dip:

     

    Ingredients

     

    2 Fresh artichokes

    1 Lemon, juice squeezed

    1 tsp Salt

    OR

    1 can(s) Artichokes (drained and sliced)

    1 lb(s) Cream cheese

    8 oz Mascarpone cheese

    2 Tbsp All purpose flour, sifted

    8 oz Grated parmesan

    1/4 tsp Fresh Thyme leaves

    1/4 tsp Crushed red pepper

    1/8 tsp Ground black pepper

    1 Tbsp Fresh Italian parsley, chopped

    1 Garlic clove, minced

    1 oz Green onions, chopped

    1/4 tsp Salt

    4 oz Fresh spinach, chopped

     

     

    Procedures

     

    Preparation with Fresh Artichoke

     

    - Boil artichokes in 3 quarts water with 1 tsp salt and lemon juice.

     

    - Let artichoke cool down. Clean, peel and slice artichoke.

     

    - Follow Dip Preparation below using fresh artichokes.

     

     

     

    Dip Preparation

     

    - In a large bowl, mix all ingredients.

     

    - Spray a 14" non stick baking pan with Pam; fill pan with mixture.

     

    - Bake at 325F for about 25 minutes or until internal temperature in the center reaches 165F.

     

    - Serve hot with toasted Italian bread.

     

    - Sprinkle top with parmesan cheese.

     

     

     

    Hot Spinach Dip

     

    Makes 3 cups; Prep time: 30 minutes; Total time: 1 hour

    This rich, creamy dip can be assembled through step two up to three days ahead, then covered and refrigerated; it can also be served as a side dish.

     

     

    2 teaspoons olive oil, plus more for baking dish

     

    1 medium onion, diced

     

    2 garlic cloves, minced

     

    2 pounds spinach, cleaned, trimmed, and coarsely chopped

     

    1/2 cup milk

     

    6 ounces reduced-fat bar cream cheese

     

    3 dashes Worcestershire sauce

     

    3 dashes hot sauce, such as Tabasco

     

    3/4 cup shredded mozzarella cheese

     

    Coarse salt and ground pepper

     

    Baguette slices, breadsticks, or crackers, for serving

     

    1. Preheat oven to 425°. In a Dutch oven (5-quart pot with a tight-fitting lid) over medium heat, warm oil. Add onion and garlic; cook until lightly browned, 5 to 8 minutes.

     

    2. Add spinach in two additions, letting the first batch wilt before adding the next; cook until completely wilted, 5 to 8 minutes. Transfer to a colander; drain, pressing to release all excess liquid.

     

    3. In the same pot, warm milk over high heat. Whisk in cream cheese until melted, about 3 minutes. Add spinach, Worcestershire sauce, hot sauce, and 1/4 cup mozzarella; stir to combine. Season with salt and pepper. Pour into a lightly oiled 1 1/2-quart shallow baking dish; sprinkle with remaining 1/2 cup mozzarella.

     

    4. Bake until bubbly and golden brown, 20 to 25 minutes. Serve hot with accompaniments, as desired.

     

     

    Note: Two 10-ounce packages of frozen spinach can be substituted for the fresh. Thaw according to box instructions, drain well, and chop.

     

     

     

    Hot Spinach Dip:

     

    1 cup chopped onion

    1 cup salsa

    1 10-oz. pkg. chopped spinach, thawed and squeezed dry

    2 1/2 cups grated Jack cheese

    8 oz.s cream cheese, cut into small cubes

    1/2 cup sliced black ollives

    1 cup chopped pecans

     

    Instructions:

     

    Combine onion, salsa, spinach, 2 cups cheese, cream cheese and olives. Transfer to oven-proof serving dish and top with pecans.

     

    Bake about 30 minutes at 400 until hot and bubbly. Top with remaining cheese. Serve hot with corn chips or chips of your choice.

     

    Veggie Pizza:

     

    2 tubes crescent rolls-Pillsbury is good

    2-8 oz. pkgs. Cream Cheese, softened

    1 envelope Ranch Dressing Mix

    Chopped vegetables---broccoli, cauliflower carrots, etc.-your choice

    2 cups Shredded Cheddar Cheese

     

    Spread crescent roll dough on greased 11x14 baking sheet (press seams together). Bake according to packgage directions, let cool. In medium bowl, mix cream cheese and ranch dressing until well blended. Spread over crescent roll crust. Top with favorite vegetables; ten cover with shredded cheese. Cut into squares. Keep refrigerated.

     

    Spinach Dip:

     

    1 medium onion chopped (small)

    2 cans spinach (drained)

    1 small can plum tomatoes chopped (small)

    1 (4 oz.) can green chilies-chopped and drained

    1 (8 oz.) cream cheese (room temperature)

    1 cup half and half

    10 oz. grated Monterey Jack Cheese

    1 tablespoon red wine vinegar

    2 tablespoons sour cream

    Salt and pepper to taste

     

    Saute onion in skillet over medium heat until softened. Add tomatoes and chilies and then cook 2 minutes. Tranfer to a large bowl and stir in spinach, cheese, cream cheese, half and half and vinegar. Season wtih salt and pepper. Spoon minxture into shallw baking dish and bake in a 400 degree oven until dip is bubbly and top is light brown, about 35 minutes. Top with a spoon of sour cream and serve with tortilla chips.

  4. I go by looks of a recipe so I didn't measure all the ingredients. We like it hot and spicy. I know salsa has tomatoes in it..but, added some fresh chopped tomatoes to it and glad I did. I used alot of garlic powder and cayenne red pepper.

     

    Guacamole:

     

    4 avocados

    2/3 cup sour cream

    Juice of 2 lemons

    1/4 cup salsa-I used hot salsa

    green onions, chopped

    diced tomatoes

    1 small can diced green chilies

    salt

    pepper

    cayenne red pepper

    garlic powder-next time I will add minced fresh garlic and garlic powder

    1/2 teaspoon Worcestershire Sauce

    1/4 teaspoon hot pepper sauce

    I will add chopped fresh cilantro next time to it also

     

    Peel and mash avocados. Add the rest of the ingredients, stir and refrigerate.

    When ready to serve...spread on tortillla chips...homemade is the best...and top with grated cheddar cheese.

  5. I have spinach dip recipes too...will post them after I find them in my computer. To be honest..haven't tried but maybe one of the spinach dip recipes. The guacamole recipe that I made, is the best guacamole that I have ever ate and that includes restaurants where we have ordered it. Will go look for the spinach dip recipes now. I have them on my computer somewhere lol Maybe I should have registered as the recipe queen instead of ninersgirl lol

    I made guacamole yesterday..sort of combined 3 recipes together..one from the web and 2 from friends..and it turned out really good- in my opinion anyway. I don't know about all of you..but, I like to have munchies when the Huskers play lol If anyone wants the recipe...reply to this and I will post it.. Go HUSKERS:)

  8. Having my morning coffee...reading this site..and trying to wake up:) How about this question...what do you enjoy doing on the computer? I search for recipe sites..belong to one site that I post recipes on ...I play in backgammon tourneys...love dogs and cats...husker football of course....if I had a choice to watch a good football game or baseball game on tv or to go shopping...I would pick to watch the games rather than to go shopping..like to play blackjack on the compuer..no money involved...just for fun...ok now your turn...what do you like to do?

  10. What is one of your most favorable memories of attending a Nebraska football game? My mom used to make fried chicken etc. for my dad and his friends when they went to a game and dad would have most of the chicken ate by the time they got to the game lol

  11. I just found this board and I like it alot:) I hope I am posting this in the right spot:) I used to live in Nebraska and I miss the Husker football games. I was so happy that the game was on tv here yesterday and of course...was thrilled the Huskers won:) This is a very nice board...have a great day all:)
