SALSA CHICKEN 4 skinless, boneless chicken breast halves 1 cup chunky salsa 1 cup shredded Cheddar cheese 2 tablespoons sour cream Taco seasoning to taste **See Below Preheat oven to 375 degrees. Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all. Bake at 375 degrees for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream and serve immediately. Yield: 4 Servings Creamy Italian Chicken 4 - 6 Boneless skinless chicken breasts 1 Package dry Italian salad dressing mix or Ranch Salad dressing mix 1/4 Cup water 1 box fresh mushrooms washed and sliced 1 Can Cream of Chicken Soup 1-8 oz. package cream cheese Place chicken breasts in crock pot set on low. Place sliced mushrooms on top. pour water mixed with salad dressing mix over the chicken and mushrooms and cover crock pot. Cook for 6 - 8 hours. One hour before serving, drain liquid out of crock pot and mix with cream cheese and soup ( I find it best to beat soup and cream cheese together before adding the hot liquid. then beat with electric mixer until smooth) Pour this this mixture back in the crockpot for last hour of cooking time. This recipe is very "flexible" and is easily doubled.

"It was Bob the next door neighbor," she replies. "Great!" the husband says, "did he say anything about the $800 he owes me?" Moral of the story: If you share critical information pertaining to credit and risk with your management in time, you may be in a position to prevent avoidable exposure. Corporate Lesson 2: A priest offered a lift to a Nun. She got in and crossed her legs, forcing her gown to reveal a leg. The priest nearly had an accident. After controlling the car, he stealthily slid his hand up her leg. The nun said, "Father, remember Psalm 129?" The priest removed his hand. But, changing gears, he let his hand slide up her leg again. The nun once again said, "Father, remember Psalm 129?" The priest apologized "Sorry sister but the flesh is weak." Arriving at the convent, the nun went on her way. On his arrival at the church, the priest rushed to look up Psalm 129. It said, "Go forth and seek, further up, you will find glory." Moral of the story: If you are not well informed in your job, you might miss a great opportunity. Corporate Lesson 3: A sales rep, an administration clerk, and the manager are walking to lunch when they find an antique oil lamp. They rub it and a Genie comes out. The Genie says, "I'll give each of you just one wish." "Me first! Me first!" says the admin. clerk. "I want to be in the Bahamas, driving a speedboat, without a care in the world." Poof! She's gone. "Me next! Me next!" says the sales rep. "I want to be in Hawaii, relaxing on the beach with my personal masseuse, an endless supply of Pina Coladas and the love of my life." Poof! He's gone. "OK, you're up," the Genie says to the manager. The manager says, "I want those two back in the office after lunch." Moral of the story: Always let your boss have the first say. Corporate Lesson 4: A crow was sitting on a tree, doing nothing all day. A rabbit asked him, "Can I also sit like you and do nothing all day long?" The crow answered: "Sure, why not." So, the rabbit sat on the ground below the crow, and rested. A fox x jumped on the rabbit and ate it. Moral of the story: To be sitting and doing nothing, you must be sitting very high up. Corporate Lesson 5: A turkey was chatting with a bull. "I would love to be able to Get to the top of that tree," sighed the turkey, but I haven't got the energy." "Well, why don't you nibble on my droppings?" replied the bull. "They're packed with nutrients." Chili 1 package hamburger 1 package hot sausage-Farmer John 2 onions, diced 2 tablespoons chili powder 1 tablespoon pepper 3 cloves garlic, minced 2-14-1/2 oz. cans Del Monte diced tomatoes with zesty milid green chilies 1-30 oz. can Hunts chili beans, drained and rinsed sliced mushrooms 2 Farmer John smoked sausage hot links-chopped up 1-28 oz. can whole peeled tomatoes Cook hamburger and sausage in a skillet, drain grease. Add all of the above and this mixure in a crockpot, stir well. I covered the top with more chili powder, stirred again and covered the top again with chili powder. Cook on low for 8 to 10 hours. Add jalapeno or cheddar cheese on top of chili when you put it in a bowl. Chunky Apple Cake 1/2 cup butter, softened 2 cups sugar 1/2 teaspoon vanilla extract 2 eggs 2 cups all-purpose flour 1-1/2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 1/2 teaspoon salt 1/2 teaspoon baking soda 6 cups chopped peeled tart apples Butterscotch Sauce 1/2 cup packed brown sugar 1/4 cup butter, cubed 1/2 cup heavy whipping cream In a large mixing bowl, cream the butter, sugar and vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda, gradually add to creamed mixture and mix well (batter will be stiff). Stir in apples until well combined. Spread into a greased 13x9x2-in. baking dish. Bake at 350 for 40-45 minutes or unti top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving. Meanwhile, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake. Top with whipped cream. Strawberry Ice Cream Dessert 2 cups graham cracker crumbs 6 tablespoons butter, melted 1 quart strawberry ice cream, softened 1-1/2 cups milk 2 packages (3.3 oz.s each) instant white chocolate pudding mix 1 teaspoon vanilla extract 1 carton (16 oz.s) frozen whipped topping, thawed, divided In a bowl, combine cracker crumbs and butter; set aside 2 tablespoons for garnish. Press remaining crumb mixture onto the bottom of an ungreased 10-in. springform pan. Place on baking sheet. Bake at 375 for 8 minutes or until edges begin to brown. Cool on wire rack. In a large mixing bowl, combine the ice cream, milk, pudding mixes and vanilla; beat until smooth. Fold in half of the whipped topping. Pour over crust. Cover and freeze for 1 hour or until firm. Spread wih remaining whipped topping and sprinkle with reserved crumb mixture. Freeze for at least 3 hours or until firm. Remove from the freezer 15 minutes before serving. Yield: 12 servings. Spicy Ranch Chicken Wings 4 lbs. whole chicken wings 3/4 cup hot pepper sauce 1/4 cup butter, melted 3 tablespoons cider vinegar 1 envelope ranch salad dressing mix 1/2 teaspoon paprika Cut the chiken wings into three sections; discard wing tip sections. In a gallon-size resealable plastic bag, combine the hot pepper sauce, butter and vinegar. Add chicken wings; seal bag and toss to coat evenly. Refrigerate for 4-8 hours. Place chicken on racks in two greased 15x10x1-inch baking pans. Sprinkle with dressing mix and paprika. Bake, uncovered, at 350 for 40-50 minutes or until juices run clear. Yield: about 4 dozen. 3 pounds of uncooked chicken wing sections (wingettes) may be substituted for the whole chicken wings. Omit the first step.

Marinated Mushrooms 1 pound fresh whole mushrooms 1 large onion, sliced 3/4 cup olive oil 1/4 cup white vinegar 2 garlic cloves, minced 1/2 teaspoon salt 1/4 teaspoon ground mustard 1/8 teaspoon pepper Crushed red pepper-flakes to taste In a large bowl, combine all ingredients. Cover and refrigerate for 1 to 2 days. Serve with a slotted spoon. Yield: 6-8 servings. For the best flavor, allow the mushrooms to marinate a few days before serving. BLT Dip 2 cups (16 oz.s) sour cream 2 cups mayonnaise 2 pounds sliced bacon, cooked and crumbled 6 plum tomatoes, chopped 3 green onions, chopped Assorted crackers or chips In a bowl, combine the sour cream, mayonnaise, bacon, tomatoes and onions. Refrigerate until serving. Serve with crackers or chips. Yield: 6 cups. Meaty Chili Dip 1 pound ground beef 1 medium green pepper; chopped 1 cup water 1 can (6 oz.s) tomato paste 1 package (3 oz.s) cream cheese, cubed 1 envelope chili seasoning mix Corn chips In a large skillet, cook beef and green pepper over medium heat until meat is no longer pink; drain. Add the water, tomato paste , cream cheese and chili seasoning mix. Bring to a boil. Reduce heat; simmer, uncovered, until cheese is melted. Transfer to a slow cooker or chafing dish to keep warm. Serve with corn chips. Yield: 3 cups. Chili Artichoke Dip 1 can (14 oz.s) water-packed artichoke hearts, drained and chopped 1 jar (6-1/2 oz.s) marinated artichoke hearts, drained and chopped 1 can (4 oz.s) chopped green chiles 3 cups (12 oz.s) shredded cheddar cheese 1/4 cup mayonaise Assorted crackers or tortilla chips In a bowl, combine the artichokes, chilies, cheese and mayonnaise. Transfer to a greased 8-in. square baking dish. Bake, uncovered, at 350 for 20-25 minutes or until cheese is melted. Serve warm with crackers or tortilla chips. Yield: about 2-1/2 cups. Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise in this recipe. Spiced Pecans 2 cups pecan halves 1/4 cup butter 1/4 cup sugar 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cloved In a skillet over low heat, toast pecans in butter for 15 minutes or until lightly browned, stirring often. Drain on paper towels. In a bowl, combine the sugar and spices. Add pecans and toss to coat. Spread on a foil-lined baking sheet. Bake at 325 for 10 minutes. Cool. Store in an airtight container. Yield: 2 cups. Enchilada Sauce 1 15 ounce can tomato sauce 1/2 t. garlic, crushed 1/4 t. basil 1 t. paprika 1/4 t. cumin 1 t. cilantro 1 t. cayenne pepper 2 t. hot chili powder few dashes black pepper 2 cups chicken broth Heat to a boil, simmer 20 minutes. This is great on any Mexican food! Lemon Bars 1 package lemon cake mix 1/3 cup butter or margarine -- softened 3 eggs 1 cup granulated sugar 1/2 teaspoon baking powder 1/4 teaspoon salt 2 teaspoons grated lemon zest 1/4 cup lemon juice Powdered sugar -- if desired Heat oven to 350º. Mix cake mix (dry), butter and 1 of the eggs with spoon until crumbly; reserve 1 cup. Press remaining crumbly mixture lightly in bottom of ungreased rectangular pan, 13 H 9 H 2 inches. Bake about 10 minutes or until light brown. Beat remaining 2 eggs, the granulated sugar, baking powder, salt, lemon peel and lemon juice with hand beater until light and foamy. Pour over hot baked layer. Sprinkle with reserved crumbly mixture. Bake about 15 minutes or until light brown and set. Sprinkle with powdered sugar; cool. Cut into 6 rows by 5 rows. Twice Bakes - Cheesy 6 large potatoes 1 package cream cheese (8oz), softened 1 stick butter, softened 1/2 c. cheddar cheese, shredded (pepper jack is good too) Salt & pepper to taste Green onion or scallions, sliced 1/4 c. shredded cheddar cheese Wash & bake potatoes. Slice in half (reserve skins), scoop out insides & mix together cream cheese, butter, cheddar cheese, salt & pepper. Stuff mixture back into potato skins, top with remaining cheese & green onions. Bake 400º for 20 to 30 minutes. Seasoned Pretzels 1/2 teaspoon garlic salt 1/2 teaspoon dill weed 1/2 teaspoon lemon pepper seasoning 1 envelope dry ranch dressing mix 3/4 cup vegetable or canola oil 2 pounds broken pretzel pieces Mix ingredients and pour over pretzels. Bake at 200 F for an hour. Stir every 10-15 minutes. Family-Style Baked Beans 3 cans (16 oz.s each) pork and beans 1-1/2 cups ketchup 1 large onion, chopped 3 tablespoons brown sugar 3 tablespoons Worcestershire sauce 1 tablespoon white vinegar 3/4 teaspoon chili powder 1/4 to 1/2 teaspoon hot pepper sauce In a large bowl, combine all ingredients. Transfer to an un-greased 2-1/2-qt. baking dish or bean pot. Cover and bake at 350 for 30-35 minutes or until bubbly. Broiled Buttery Shrimp 1 cup butter, melted 1/2 cup lemon juice 1 tablespoon Worcestershire sauce 1 tablespoon steak sauce 1 teaspoon salt 1/2 teaspoon dried thyme 1/2 teaspoon pepper 1/4 teaspoon hot pepper sauce 1 pound uncooked large shrimp, peeled and deveined In a large bowl, combine the first eight ingredients; add shrimp and toss to coat. Arrange shrimp in a single layer in a greased 15x10x1-inch baking pan. Broil 4-6 inches from the heat for 6-8 minutes or until shrimp turn pink, turning once. Yield: 10-12 servings. Bacon-Wrapped Cajun Jalapenos 8 large jalapeno peppers 1 package (3 oz.s) cream cheese, softened 1/2 cup finely shredded Cheddar cheese 1 teaspoon Cajun seasoning 8 thick-sliced peppered bacon strips Cut jalapenos in half lenghtwise; remove seeds and center membrane. In a small mixing bowl, combine the cream cheese, cheddar cheese and Cajun seasoning. Stuff about 1-1/2 teaspoonfuls into each pepper half. Cut bacon strips in half widthwise. In a large skillet, cook bacon until partially cooked. Wrap a bacon piece around each pepper; secure with a toothpick. Cajun Shrimp Skewers 3/4 cup vegetable oil 1 medium onion, finely chopped 2 tablespoons Cajun seasoning 6 garlic cloves, minced 2 teaspoons ground cumin 1 teaspoon minced fresh rosemary 1 teaspoon minced fresh thyme 2 pounds uncooked large shrimp, peeled and deveined Cajun Butter: 1 cup butter, cubed 1 teaspoon minced fresh basil 1 teaspoon minced fresh tarragon 1 teaspoon Cajun seasoning 1/2 teaspoon garlic powder 3 drops hot sauce In a small bowl, combine the first seven ingredients. Place the shrimp in a large resealable plastic bag; add half of the marinade. Seal bag and turn to coat; refrigerate for 1 to 2 hours. Cover and refrigerate remaining marinade for basting. In a small saucepan, combine the Cajun butter ingredients; heat until butter is melted. Keep warm. Drain and discard marinade. Thread shrimp onto eight metal skewers or soaked wooden skewers. Grill, uncovered, over medium heat for 2-4 minutes on each side or until shrimp turn pink, basting once with reserved marinade. Serve with Cajun butter. Yield: 8 servings.

The problems we had were..my hon couldn't get a web page to come up after he downloaded it-we ran scans on our computers..no viruses found and on my computer..my tool bar..was full of junk and couldn't even find tools for example on it-I always use tools to delete files, etc. Then I had to keep keep clicking on do not send error report or send error report and had to keep restarting the computer..it was the pitts big time and glad my hon figured out how to delete the dang thing!

A women was helping her husband set up his computer, and at the appropriate point in the process, she told him that he would now have to enter a password, something he could remember easily and will use each time he has to log on. The husband was in an amorous mood and figured he'd try for the shock effect to bring this to his wife's attention, so when the computer asked him to enter his password, he made it plainly obvious to his wife that he was keying in... P....E...N....I....S His wife fell off the chair laughing when a pop up window appeared with the following message: Password rejected- not long enough.
