  1. Sweet Chicken Bacon Wraps: 1-1/4 lbs. Boneless, Skinless Chicken Breasts-(About 4 Breasts) 1 Pkg. Sliced Bacon 2/3 Cup Firmly Packed Brown Sugar 2 T. Chili Powder Freeze the bacon so it is easier to cut. When ready to make, cut bacon into thirds and thaw in refrigerator. Preheat oven to 350 degrees. Cut chicken breasts into 1-in. cubes. Wrap each chicken cube with bacon and secure with a toothpick. Stir together brown sugar and Chili Powder. Dredge wrapped chicken in mixture. Coat a rach and broiler pan with Pam. Place chicken wraps on rack in broiler pan. Bake at 350 degrees for 30 to 35 minutes or until bacon is crisp.
  2. Seafood Nachos: Tortilla Chips-(Enough For Crab and Lobster To Cover) 1-(8-oz.) Pkg. Louis Kemp Crab Delights 1-(8-oz.) Pkg. Louis Kemp Lobster Delights 1 Pkg. Frozen Baby Shrimp, Thawed or Fresh Baby Shrimp Sliced Jalapenos, Opt. Shredded Monterey Jack Cheese or Shredded Mexican Cheese-(Enough To Cover Nachos) Spread Tortilla Chips on 10-in. waxed paper-lined paper plate. Layer the crab, lobster and shrimp over the Tortilla Chips. Sprinkle Jalepenos over Tortilla Chips, if using. Sprinkle the Shredded Cheese on top. Microwave at medium power until cheese is melted. Serve with Salsa or Picante Sauce. ***You can also bake this in the oven till heated through and cheese is melted.
  3. Seasoned Pretzels: 1/2 Tsp. Garlic Salt` 1/2 Tsp. Dill Weed 1/2 Tsp. Lemon Pepper Seasoning 1 Envelope Hidden Valley Ranch Dressing Mix 3/4 Cup Vegetable or Canola Oil 2 lb.s Broken Pretzel Pieces Mix all ingredients and pour over pretzels. Bake at 200 degrees for an hour. Stir every 10-15 minutes.
  4. Hidden Valley Ranch Pretzels: 1 Bag Sourdoug Pretzels-(Broken Into Small Pieces) 1/4 Tsp. Lemon Pepper 1/4 Tsp. Garlic Powder 1/3 Cup Canola Oil 1 Pkg. Hidden Valley Ranch Dressing Mix Lemon Pepper, Garlic Powder, Hidden Valley Ranch Dressing and Canola Oil in a small bowl. Pour over pretezels and mix well with hands. Place on cookie sheet and bake at 200 degrees for 20-25 minutes. ***Can bake longer for darker pretzels.
  5. Hot Pepper Pecans: 1-1/2 T. Butter 2 Cups Pecans 1 Tsp. Salt 2 Tsp. Soy Sauce 1/8 Tsp. Hot Pepper Sauce Melt 1-1/2 T. butter in baking pan. Add 2 cups pecans and toast in 300 degree oven for 30 minutes in a Jelly Roll pan, stirring occasionally. Remove and add seasonings. Toss to coat. Serve hot or cold.
  6. Golden Sausage Egg Rolls: 1 pkg. Hot Jimmy Dean Pork Sausage 2-(16-oz.) Bags Cole Slaw Mix 3 T. Fresh Ginger, Finely Chopped 3 T. Fresh Garlic, Finely Chopped 1 T. Black Pepper 1 Tsp. Salt 1 Pkg. Egg Roll Wrappers-(18-20 Egg Roll Wrapers) Vegetable Oil For Frying Dipping Saue-Spicy Mustard, Sweet and Sour Sauce Or Soy Sauce In large skillet, cook sausage over medium high heat, stirring frequently until thoroughly cooked and no longer pink. Remove from heat; add cabbage, ginger, garlic, pepper and salt; mix well. Transfer mixture to colander to drain; cool 15 minutes before using. Assemble egg rolls according to directions on wrapper package, using 1/3 cup of mixture for each roll. To cook: in a wok, Dutch Pven or Deep-Fat Fryer, add oil to a depth of 3 inches; heat to 375 degrees. Fry 3 or 4 at a time for about 3 minutes or until golden brown; drain on paper towels. Serve with your favorite dipping sauce.

Chicken and Rice: 4 cups cooked chicken, diced 3 cups chicken broth 8 oz. sour cream 2 cups Minute Rice 2 cans 'cream of soups' (chicken or mushroom or a combo of both) 1 medium, sauteed onion (optional) 2 tubes crushed Ritz crackers 1 stick melted butter Cook the chicken, when cooled debone and dice. Mix with the broth, rice, soups and sour cream. Add sauteed onion, if using. Mix well. Place in a greased 9x13 casserole. Bake at 350 degrees for 20 minutes. Meanwhile, melt the butter and add to the crushed crackers. Mix. After 20 minutes, sprinkle over the partially cooked casserole. Bake an additional 15 minutes, until crackers are browned and casserole is bubbly.
  8. I haven't made these..heard these were good. Baked Chips: 4 Large Baking Potatoes-(Skins On) 2 T. Olive Oil 1-1/2 Tsp. Kosher Salt 1 Tsp. Garlic, Minced 1/2 TSP. Ground Black Pepper 1/2 Tsp. Season Salt 1/2 Tsp. Emeril’s Essence Preheat oven to 400 degrees. Cut potatoes in very thin slices. ***Or you can cut the potatoes in half and then cut the halves into four slices. In a large bowl, pour Olive Oil and Emeril’s Essence over the potatoes. Toss to coat the potato slices. Lay potato slices on a large baking sheet and bake for 15 minutes. Remove from oven and turn the potato slices over. Bake for an additional 10-15 minutes.
  9. Pizza Subs: I don't really have a recipe for the Pizza Subs, but, here's what I do... I take a 10 inch sub bun an cut it in half. I toast both halves under the broiler until lightly toasted. Then I remove them from the oven and spread pizza sauce on each half and I put Shredded Mozzarella Cheese on each half. Then, on one half, I put on my favorite pizza toppings and then I top it with the other half of the sub bun. Wrap it tightly in foil and place in a preheated 300 degree oven for about 15 minutes or until it's heated through and the cheese is all melted and gooey. Remove from oven, unwrap, cut in half and enjoy!
  10. Classic Philly Cheese Steak Sandwich: 2 Sub buns, 10 inch long 1 lb. Raw roast beef, shaved thin (our butcher partially freezes a beef roast and slices it on his deli meat slicer) 1 large white onion Cheese Whiz Butter Vegetable Oil Pepper to taste Split sub buns lengthwise and lightly toast insides on pan in 1 TBSP butter. Thinly slice the onion into half rings and place into a heated pan with 2 TBSP of butter. Cook until soft. Remove onions and set aside. Add 2 TBSP of vegetable oil to pan and fast fry the beef slices until cooked. Assembly: Spread Cheese Whiz on both sides of sub bun, place beef on the bun, then the onions on beef. You can add others toppings if desired like Jalapeno Peppers and mustard.

  12. CORN DOGS ON A STICK: 1 Pkg. Hotdogs-(8) 8 Large Bamboo Skewers 1 Pkg. Quick Corn Muffin Mix (Mixed To A Thick Mix) 1 Qt. Corn Oil Yellow Or Spicy Mustard Preheat oil to 320-330 degrees. Skewer each hotdog. Dredge each hotdog with cornmeal batter. Carefully drop corndogs into preheated oil. Fry each corndog until golden brown. Remove corndogs with tongs, lifting by the exposed skewer; drain on paper towels. Serve with mustard.

Tony Roma's Baked Potato Soup: 2 medium potatoes (about 2 cups chopped) 3 tablespoons butter 1 cup diced white onion 2 tablespoons flour 4 cups chicken stock 2 cups water 1/4 cup cornstarch 1 1/2 cups instant mashed potatoes 1 teaspoon salt 3/4 teaspoon pepper 1/2 teaspoon basil 1/8 teaspoon thyme 1 cup half and half Garnish: 1/2 cup shredded cheddar cheese 1/4 cup crumbled cooked bacon 2 green onions, chopped (green part only) Preheat oven to 400 degrees and bake the potatoes or 1 hour or until done. When potatoes have cooked remove them from the oven to cool. As potatoes cool prepare soup by melting butter in a large saucepan, and sauté onion until light brown. Add the flour to the onions and stir to make a roux. Add stock, water, cornstarch, mashed potatoes, and spices to the pot and bring to a boil. Reduce heat and simmer for 5 minutes. Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Chop baked potato with a large knife to make chunks that are about 1/2-inch in size. Add chopped baked potato and half-and-half to the saucepan, bring soup back to a boil, then reduce heat and simmer the soup for another 15 minutes or until it is thick. Spoon about 1 1/2 cups of soup into a bowl and top with about a tablespoon of shredded cheddar cheese, a half tablespoon of crumbled bacon and a teaspoon or so of chopped green onion. Repeat for remaining servings.
  14. Taco Beef Nuggets With Jalapeno Lime Sauce: 1-lb. Ground Round Beef 2 T. Taco Seasoning Mix 1-(4-oz.) Can Chopped Green Chiles, Drained 16 Cubes-(1/2-in.) Co-Jack Cheese 1 Egg White 1 T. Water 2 Cups Crushed Nacho Cheese Tortilla Chips Jalapeno Lime Sauce: 3 cups Hidden Valley Ranch Dressing ¼ cup Sour Cream Garlic, Chopped To Taste 1/4 Cup Canned Green Chiles Or Fresh Green Chiles, Roasted-(Peeled and Seeded) ¼ Cup Pickled Jalapeno Slices-(From A Jar) and Fresh Sliced Jalapenos To Taste 1-1/2 T. Fresh Lime Juice 3 T. Fresh Cilantro Leaves, Chopped, Opt. 1 Roma Tomato, Diced Pulse all ingredients in a blender, in batches, until smooth. Chill and use as needed. Heat oven to 400 degrees. Combine ground beef, Taco Seasoning and green chiles in large bowl, mixing lightly, but, thoroughly. Dived beef mixture into 16 portions, shape each portion around a cheese cube, completely covering cheese. Beat egg white with water in shallow dish, until blended. Place chips in second shallow dish. Dip each meatball into egg white mixuture, then into chips to coat completely. Press each meatball with palm into a flatteed nugget shape, generously coating both sides of nuggets with chips. Spray large baking pan with non-stick cooking spray. Place nuggets in baking pan; spray tops of nuggets generously with non-stick cooking spry. Bake in 400 degree oven for 15-20 minutes, until not pink and juices show no pink color. .
  15. I don't make alot of pies...I cheat and buy ready made pie crusts. I would like to have an easy pie crust recipe for a douhble and single crust. Does anyone have a recipe for these that are easy to make and roll out nicely that would help me out? I had my mom's pie crust recipe and lost it..dang. I could make hers. She isn't with us anymore....so can't aske her. I know I could search the web, but, would love to have a tried and true one from someone here on the board. So could any males on here ask their wife for the recipe they use? Thx

    Meatloaf

    We really like this meatloaf...just guessing the amount of the hamburger...I put this in a cake pan and bake it. Preheat oven to 350*. Meatloaf: 1-1/2 lbs. to 2 lbs. ground beef 1 lb. Jimmy Dean Sausage-We like the Hot Sausage 1 cup milk 2 eggs, beaten chopped onion to taste chopped celery to taste 2/3 cup ketchup 1/2 cup dry bread crumbs (in a can.)..with roasted garlic fresh bread crumbs-I use 4 slices of bread 2 pkgs. Meatloaf Seasoning pepper to taste Thoroughly mix all the ingredients in a large bowl and put in a loaf pan...I use a cake pan. Bake at 350 degrees for 50 minutes or till done. You can make a glaze before putting it in the oven if you want...that is good too. Glaze: 1/4 cup ketchup, 1 tsp. dry mustard and 2 T. brown sugar. Mix all ingredients well and put on top of meatloaf. Double ingredients if your meatloaf is larger. *I like to put some sliced American Cheese on top sometimes and let it melt in the oven, if I don't make the glaze.

Chicken Cajun Pasta: 2 each chicken breasts, cut in strips. 2 teaspoons cajun seasoning 2 tablespoons butter 8 slices green bell pepper 8 slices red bell pepper mushrooms, fesh and sliced sliced jalapenos-opt. green onion sliced 1 cup heavy cream 1/4 teaspoon basil 1/4 teaspoon lemon pepper 1/4 teaspoon salt 1/8 teaspoon garlic powder 1/8 teaspoon pepper 4 ounces pasta, linguini, cooked and drained Parmesan Cheese, optional. Place chicken and cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat. in a large skillet, over medium heat, saute chicken in butter until almost tender, about 5-7 minutes. add peppers, mushrooms, sliced jalapenos and onions. cook and stir for 2-3 minutes. reduce heat. add cream and seasonings, heat through. add linguini and toss, heat through. sprinkle with Parmesan Cheese if desired.
  19. Fettuccine Alfredo: 1/2 cup butter 2 T. Cream Cheese 1 pt. Heavy Cream 1 tsp. Garlic Powder Salt and Pepper to taste 2/3 cup grated Parmesan Cheese 1lb. fettuccine, prepared as directed In medium sauce pan, melt butter. When melted, add Cream Cheese. When Cream Cheese is softened, add Heavy Cream. Season with Garlic Powder, salt and pepper Simmer 15-20 minutes over low heat, stirring constantly. Remove from heat and stir in Parmesan Cheese. Serve over hot Fettuccine Noodles.

Fantasy Fudge: Yes, this is the original Fantasy Fudge recipe from the back of the Kraft Marshmallow Creme Jar. 3 cups sugar 3/4 cup margarine 2/3 cup evaporated milk 1 12-oz. package semi-sweet chocolate chips 1 7-oz. jar Kraft Marshmallow Creme 1 cup chopped nuts 1 tablespoon vanilla Traditional method: Combine sugar, margarine and milk in heavy 2-1/2 quart saucepan; bring to full rolling bail, stirring constantly. Continue boiling 5 minutes over medium heat, stirring. Remove from heat, stir in chocolate till melted. Add marshmallow creme, nuts & vanilla beat till blended. Pour into greased 13 x 9-inch baking pan. Let cool and cut into 1-inch squares. Microwave method: Microwave margarine in 4-quart microwave-safe bowl on HIGH (100%) 1 minute or until melted. Add sugar and milk; mix well. Microwave on HIGH 5 minutes or until mixture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Continue microwaving on HIGH 5-1/2 minutes; stir after 3 minutes. Stir in chips until melted. Add remaining ingredients; mix well. Pour into greased 13 x 9-inch baking pan. Cool at room temperature; cut into squares. Makes 3 pounds.

    Nachos

    Nachos: Tortilla Chips 1 can Refried Beans with 1 T. of Jalapeno Juice mixed in 1-(15-oz.) can Chili 8-oz. Grated Cheddar Cheese Salsa of your choice Chopped Green Onions, to taste Chopped Garlic, to taste Preheat oven to 400 degrees and cover a cookie sheet with either foil, or spray with non-stick cooking spray. Cover the bottom of the cookie sheet with tortilla chips. Mix together the Refried Beans and 1 T. of juice that comes out of a jar of Jalapenos. Drop spoonfuls of the Refried Beans over the Tortilla Chips as evenly as possible. Put chopped garlic and onions in chili. Drop spoonfuls of the chili over the Tortilla Chips. Cover with cheese, and bake for 15 minutes or until the cheese is melted and bubbly. Top with salsa, black olives, Jalapeno Slices, Sour Cream, or anything else you can think of! **If the Beans and Jalapeno Juice are too stiff to spoon, microwave for a little bit to make it easier to spread. ***If it looks like you haven't spread it out well enough - it does its OWN spreading in the oven so as long as you have lumps of it across the tray fairly well, it gets each chip.'' **You can add more toppings to it before it goes in the oven.

  23. Ancho Spinach Dip: 1 box-(10-oz.s) frozen chopped spinach, thawed 2 cups sour cream 1 pkg.-(8-oz.) Cream Cheese, softened 2 cups Shredded Monterey Jack Cheese 3 T. Durkee Ethnic Creations Ancho Seasoning garlic, crushed-to taste 1 can water chestnuts, drained Preheat oven to 325 degrees. Drain spinach well and squeeze out as much liquid as possible. Combine spinach, sour cream, Cream Cheese, shredded Monterey Jack Cheese, Durkee Ethnic Creations Ancho Seasoning, crushed garlic, and water chestnuts in a medium bowl until well mixed. Spray 2-quart baking dish with non-stick spray. Spread mixture into dish. Bake for 45 minutes. Serve with crackers, tortilla chips or vegetables.
  24. Mo's Lasagna: Prepare "Mo's Marinara Sauce" as directed, and set aside. (Recipe is below) 1 1/4 pounds lean ground beef 1 TBSP. olive or salad oil (I use olive oil) 1 Onion (tennis ball size, chopped fine) 2 cloves garlic, minced 1 pkg. frozen chopped spinach, very well drained 2 cups 1% or 2% cottage cheese or you can use ricotta (I love ricotta) 2 TBSP. grated Parmesan cheese 2 cups mozzarella cheese, grated 12 lasagna noodles, cooked as directed on the pkg. 1 - 9 x 13 baking pan, glass or metal (I use glass) Make marinara sauce and set aside. Boil lasagna noodles as directed, rinse in colander and set aside. In large fry pan cook ground beef, onion, and garlic in 1 Tbsp. oil until ground beef is thoroughly cooked. When done, add this to the marinara sauce and stir well. Now you have a delicious homemade meat sauce! In another bowl, add cottage cheese or ricotta, Parmesan, and 1/2 cup of the grated mozzarella cheese and the well drained spinach. Stir together well and set aside. In 9 x 13 pan, layer pan like this: Pour about 1/2 cup of Meat sauce on the bottom of your baking dish, then 3 noodles, then 1/2 of the meat sauce. Then 3 noodles, then all of the cheese mixture. Then 3 more noodles, then the rest of the meat sauce. Top with the last 3 noodles, cover with foil and bake as directed below. ( DO NOT ADD ANY GRATED MOZZARELLA ON TOP BEFORE BAKING!) Cover with foil and bake at 350 degrees for 45 minutes. Remove lasagna from oven, uncover, and immediately sprinkle with the rest of the grated mozzarella on top so it can melt. Place uncovered lasagna back in the oven for about 10 minutes or until cheese is melted. Let the lasagna sit on the counter for 10 minutes before serving. Serve with tossed salad & garlic toast! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ MARINARA SAUCE 2 TBSP Olive or Salad Oil 2 Garlic Cloves (pressed) 1 Onion (tennis ball size chopped fine) 28 oz. Can Crushed Tomatoes 1 can Tomato Paste (5.5 oz.) 1 Can Hunt's Tomato Sauce (14 oz.) 1 TBSP Sugar or Splenda 2 tsp. Sweet Basil 1/2 tsp Salt 1/2 tsp. Black Pepper In a 2 quart saucepan over medium heat, in oil, cook garlic & onion until tender, about 5 minutes. Be careful not to burn, or sauce will be bitter). Stir in mashed tomatoes, their liquid, and remaining ingredients. Reduce heat to low; cover; cook 20 - 30 minutes or until thickened, stirring occasionally. Be careful not to burn!
  25. As you all know..I love to cook..however there are times when I love to eat out or have a pizza delivered. I did this and it works. I went through all the restaurants-(including restaurants like Jack in the Box, etc.) in the city that I live that interested me and I signed up to get coupons. I have gotten 10 dollars off at a very nice restaurant for my birthday, etc. Go to wwww.yellowpages.com and type in Restaurants and put your location. Go to the restaurants that interest you. Some restaurants will have web sites and some won't have them. Anyway..some will have email alerts and coupons for your birthday and anninversary, etc. Hope this helps someone.
