Honeyed Chicken Wings

 

3 lb. chicken wings or chicken drummettes

Salt and pepper to taste

1 cup honey

1/2 cup soy sauce

2 tablespoons vegetable oil

1/4 cup tomato catsup

1/2 clove garlic, minced

 

Cut off and discard wing tips. Cut each wing into 2 pieces at joint. (Use drummetttes if you prefer.) Season with salt and pepper; set aside. Combine remaing ingredients in a saucepan and mix well. Cook for 15 minutes over moderate heat. (It will become frothy and thick.) Place wings in a shallow casserole dish. Pour 1/2 of the sauce over them and marinate for approximately 1 hour. Bake at 375 for 1 hour, basting with the remaining sauce until chicken is well done and sauce is caramelized.

 

Bacon-Cheddar Jalapeno Poppers

 

Yields: 12

Prep Tiime: 20 minutes

 

6 fresh jalapeno chiles-seeded and halved

12 slices bacon

1 lb. Cheddar cheese

 

Pre-cook bacon 2-3 minutes or until just soft, but, not browned; drain on paper towels. Cut Cheddar cheese into 12 slices long enought to fit inside the jalapeno halves and insert cheese slices into the jalapen halves. Wrap the jalpeno halves with the bacon slices, securing with a toothpick, if necessary. Place on a medium baking sheet. Cover and kep chilled until just before serving. Preheat the broiler. Broil 5 to 10 minutes, or until the bacon is evenly browned and cheese is melted. Serve hot.

 

Taco Oyster Crackers

 

1 package taco seasoning mix

1/2 teaspoon chili powder

1/2 teaspoon Italian seasoning mix

1/2 teaspoon garlic powder

2 (12 oz.) packages oyster crackers

3/4 cup canola oil or vegetable oil

 

1. Put all ingredients in a large tupperware bowl and shake well.

 

2. Keep covered until ready to eat.
