I made both of thes last night and both recipes turned out great..will make them this way from now on.. I used more hamburger and sausage than the original recipe called for and added the meatloaf seasoning to it too.

 

 

Meatloaf:

 

Preheat oven to 350*.

 

1-1/2 lbs. to 2 lbs. ground beef-used more

1/2 lb. pork sausage-used more

1 cup milk

2 eggs, beaten

Chopped onion-used a huge onion

1/3 cup ketchup-I put 2/3 in

1/2 cup chopped celery-chopped up more

3/4 cup soft bread crumbs-used more-probably 4 slices of bread-eyeball it

1 packet meatloaf seasoning-used 2 pkgs.

 

Thoroughly mix all the ingredients in a large bowl.

 

Bake at 350 for 50 minutes..if using more hamburger and sausage like I used...bake longer..keep an eye on it.

 

You can make a glaze for it before putting it in the oven..the glaze is 1/4 cup ketchup, 1 tsp. dry mustard and 2 T. brown sugar. I didn't make a glaze for it..but..have in the past and it is good to for a meatloaf.

 

I put some a slice of American Cheese on the meatloaf in the corner of what I thought I would eat and let it melt...that was good. Either way it will be good.

 

Poached Corn:

 

5 cups fresh or frozen corn-used frozen

2 cups millk

4 tsp.s sugar

butter-I used 3 T.

3/4 tsp. salt

1/2 tsp. pepper-used more

 

In a large saucepan, combine all ingredients.

 

Cook over low heat for 10-12 minutes or until cornn is tender, stirring frequently.

 

Serve with a slotted spoon.
