These recipes are so easy to make and they don't take alot of time to make either. You can have them made way ahead of game time and bake it when needed. Buy a cooked chicken at Albertson's or whereever if you want to save time making these casseroles.

 

Go Big Red Menu For Sept. 8

 

Tettrazini Casserole:

 

6 oz. noodles

1 cup cooked chicken or turkey

1 can cream of chicken soup

1 cup diced American Cheese

3/4 cup milk

1/2 cup chopped green pepper

1/2 cup sliced mushrooms

1-(10-oz.) box frozen peas

 

Cook noodles. Combine all ingredients. Add buttered bread crumbs for topping. Bake for 30 minutes in 350 degree oven.

 

Sausage Casserole:

 

2 lbs. pork sausage

2 cups milk

2 cups noodles or macaroni

1 cup chopped celery

Chopped onion-use as much as you want

1 pkg. sliced mushrooms

1/4 cup chopped green pepper

1 small jar pimento

2 cans cream of chicken soup

1 envelope dry onion soup mix

 

Fry sausage in skillet; drain grease. Put the sausage on a paper towl lined plate to absorb the grease. Spray 9x13-inch pan with Pam. Cook noodles or macaroni according to pkg. directions. Mix sausage & noodles together with the remaining ingredients. Bake 40 minutes at 350 degrees.

 

Ham Casserole:

 

2-1/2 cups cooked picnic ham

2 cans undiluted mushroom soup

1 cup milk

1 cup chiken broth

2 cups cooked macaroni

1 can mushrooms, drained or use sliced fresh mushrooms

1 onion, diced

 

Mix all the above ingredients together and put in a 9x13-inch pan; REFRIGERATE OVERNIGHT-VERY IMPORTANT. When ready to bake the next day; let stand at room temperature one hour before baking. Cover with breaded crumbs & paprika. Bake at 350 degrees for 1 hour. Let stand 10 mintues before serving.

 

Hamburger Casserole:

 

2 lbs. hamburger

2 cups milk

2 cups kluski noodles

1/2 cup green pepper, diced

1/2 cup onion, diced

1 cup celery, diced

sliced mushrooms-opt.

1 can cream of chicken soup

1 can cream of mushroom soup

Crushed potato chips-opt.

 

Brown hamburger; drain grease. Combine soups and milk together in a large mixing bowl. Add hamburger and rest of ingredients. DO NOT COOK THE KLUSKI NOODLES- add to mixing bowl right out of the package. Turn mixture into a buttered casserole dish and bake for 45 minutes at 350 degrees. Add crushed potato chips on top of casserole-opt.

 

Smothered Hamburger Steaks:

 

1-1/2 lbs hamburger

3/4 cup diced onions

1/2 cup diced green pepper

3/4 cup bread crumbs

1 beaten egg

salt and pepper to taste

 

Mix all the above ingredients together; form into hamburger steaks. Put hamburger steakd into a baking dish that has been sprayed with Pam. Pour 2 cans cream of musrhoom soup on top. Bake at 360 degrees for 30 minutes; can add cheese on top of steaks the last 5 minutes-opt.

 

If you make one of the casserole dishes, you don't need a potato since there is pasta in it, but, if you do want a potato..throw a baked potato in the oven..how easy is that?:) If you make the hamburger steaks...make a baked potato or frozen potatoes...now that is easy to do:) Buy garlic bread to bake..or dinner rolls.

 

Vegetable:

 

Green Bean Casserole:

 

1 (26-oz.) can condensed Cream of Mushroom Soup

1 cup milk

2 tsp.s soy sauce

1/8 tsp. pepper

2-(16-oz.) pkgs. frozen cut green beans, cooked & drained-or used canned green beans

1-(6-oz.) can Durkee French-Fried onions

 

In 13x9-inch baking dish, combine soup, millk, soy sauce & pepper. Stir in green beans & half the onions Bake at 350* for 25 minutes or until hot. Top with remaining onions. Bake 5 minutes more.

 

**You can always take the easy way out and heat up a can of corn or whatever too:)

 

 

Salad:

 

Strawberry Banana Salad:

 

This can be made ahead 1 day before the game.

 

1-(8-oz.) pkg. Cream Cheese, softened

1 cup sugar

8 to 12 oz.s Cool Whip

10 oz. frozen strawberries, partially thawed

2 or 3 bananas, sliced

 

Combine Cream Cheese & sugar. Mix well. Fold in remaining ingredients. spread in 9x13" pan. Freeze overnight. You could also use this as a dessert & make a lettuce salad in advance.

 

Dessert:

 

This can be made the day before the game also.

 

 

Butterscotch Dessert:

 

Melt 1 stick of butter or margarine. Add 1 cup flour & 1/2 cup chopped pecans. Press this mixture into the bottom of a 9x13-inch pan & bake at 325 degrees for 10 minutes. Cool crust. Whip together:

 

1-(8-oz) pkg. Cream Cheese, softened

1 cup powdered sugar

1 cup Cool Whip

 

Smear this mixture over crust; cool in refrigerator. Hint: Drop the Cream Cheese mixture all over the crust in teaspoons, then spread it gently or else the crust will be a crumbly mess. Cook 2 small pkgs. of butterscotch pudding, cook & serve pudding (or chocolate) with 3 cups milk & 1 tsp. vanilla. Pour this over the cream cheese layer. Cool. Top with Cool Whip.

 

There is always an easy way out for dessert...buy ice cream:)
