Ham Casserole:

 

2-1/2 cups cooked picnic ham-any kind of ham will work for this recipe

2 cans undiluted mushroom soup

1 cup milk

1 cup chicken broth

2 cups cooked macaroni

1 cup sliced mushrooms-I like fresh mushrooms but you can use a can of mushrooms..just make sure you drain the juice off

1 small diced onion

 

Mix together all ingredients and put in a 9x13 inch pan and refrigerate overnight. Let stand at room temperature one hour before baking. Cover with breaded crumbs and paprika. Bake at 350 degrees for 1 hour. Let stand 10 minutes before serving.

 

Sausage Casserole:

 

2 lbs. pork sausage

2 cups milk

2 cups noodles or macaroni

1 cup celery

1/4 cup chopped green pepper

1 small jar pimiento

1 envelope dry onion soup mix

sliced mushrooms-opt.

onion-chopped-opt.

 

Fry sausage and drain grease. Spray 9x13 inch pan with non-stick cooking spray. Cook noodles according to pkg. directions. Mix sausage and noodles together with the remaining ingredients. Bake 40 minutes at 350 degrees.

 

Corn Macaroni Casserole:

 

1 cup macaroni (uncooked)

2 can cream-style cron

1 can whole kernel corn (undrained)

1 cup Velveeta Cheese, cubed

1 stick margarine

2 T. chopped onion-(opt.)

 

Mix all ingredients in buttered caserole dish. Bakea at 350 degrees for a half hour, covered and one-half hour uncovered.

 

Hamburger Casserole:

 

2 lbs. hamburger

2 cups milk

2 cups KLUSKI noodles

1/2 cup green pepper, diced

1/2 cup onion, diced

1 cup celery, diced

1 can cream of chicken soup

1 can cream of mushroom soup

 

Brown hamburger; drain grease. Combine soups and milk in a large mixing bowl. Add hamburger and rest of ingredients. DO NOT COOK THE KLUSKI NOODLES-add into bowl right out of the pkg. Turn into buttered casserole and bake 45 minutes at 350 degrees. Put crushed potatoes on top after baking-opt.

 

Quick Ground Beef Casserole:

 

2 lbs. ground beef

1 clove garlic, chopped (opt.))

1 small onion, chopped

Salt and Pepper to taste

2 cups Minute Rice, uncooked

1-1/2 cups beef bouillon

1 can French-Cut green beans, undrained

1 can cream of mushroom soup

1 pkg. frozen potato nuggets

 

Lightly brown ground beef with garlic, onion, salt and pepper. Layer rice, bouillon, ground beef mixture, green beans and mushroom soup in lightly greased 1-1/2 qut. casserole. Top with potato nuggets. Bake in a 350 degree oven for 45 minutes.

 

Joan's Pan Runza:

 

1 lb. hamburger

1 cup chopped onion

salt and pepper to taste

4 cups shredded cabbage

2-(8 count) pkgs. crescent rolls

1 can mushroom soup

shredded cheese

 

Brown hamburger and onion. Remove from pan. Put cabbage in pan and cook until soft. Stir all together cabbage, meat mixture, seasonings and soup. Press 1-(8 count) can crescent rolls in bottom of 9x13-inch pan. Pour mixture over dough and sprinkle with shredded cheese. Unroll another 8-count of crescent rolls over top. Bake at 375 degrees for 10-15 minutes.

 

Hamburger Casserole:

 

1-1/2 lbs. hambuger

1 large jar Presto or Ragu Sauce

chopped onion-opt.

chopped garlic-opt.

6 oz.s wide noodles

1 carton sour cream

1 cup grated Mozzarella cheese

 

Brown hambuer; dain and add Presto or Ragu sauce. Simmer for 1 hour. Cook noodles until tender and drain. Layer noodles, sour cream, sauce and cheese in a 2-qt. casserole. Top with layers of meat, sauce and cheese. Bake at 350 degrees for 30 minutes. Let it stand 30 minutes at room temperature before serving.

 

Beef Stroganoff:

 

2 lbs. stew meat

1 pkg. dry onion soup mix

1 bay leaf

1 tsp. seasoned salt

2 cups water

1-(10-oz.) pkg. egg noodles

1 cup sour cream

1-(10-1/2 oz.) can Chedddar Cheese Soup

1 medium diced green pepper

2 cups sliced fresh mushrooms

garlic, chopped (opt.)

 

Combine meat, onion soup mix, bay leaf, seasoned salt and water in roaster. Cover and cook 1-1-1/2 hours in a 300 degree oven or until meat is tender. MIx sour cream, soup, green pepper, garlic and mushrooms with meat and bake for 15 to 20 minutes. Serve over cooked noodles.

 

This meatball recipe is real easy to make and good. It comes from a lady I know who runs a restaurant.

 

Barbecued Meatballs:

 

1-1/2 lbs. hamburger

1 cup milk

3 T. onion-I use more

3/4 cup quick oatmeal

salt and pepper to taste

 

Mix all ingredients together. Form into walnut-sized balls. Place in a 9 x13-inch baking dish. Cover with following sauce.

 

1 cup ketchup

1 T. Worcestershire Sauce

2 T. brown sugar

1/2 cup water

 

Pour over meatballs and bake at 350 degrees for 1-1/2 hours.

 

**I go by looks of a recipe...if you use more hamburger, etc...double the sauce...just make sure you have the meaballs covered with sauce...it is really good.
