Breakfast Brunch Casserole

 

8 eggs

2 c. milk

2 tsp. onion flakes

8 slices bread

2/3 c. Velveeta cheese, grated

2/3 mild Cheddar cheese

1 c. mushrooms (optional)

1# browned sausage or crumbled bacon or 1 1/2 c. cubed ham

1 small jar pimento

 

Beat eggs and milk; set aside. Cut bread crusts off bread; butter slices, cube and put into a buttered 9x13" pan. Spread meat over the cubed bread and add the cheese. Add chopped mushrooms and pimentos; pour egg mixture over all. Refrigerate overnight. Bake 1 hour at 350 degrees.
