Roxy Posted December 7, 2008 Share Posted December 7, 2008 Mo's Alfredo Sauce: You Can Also Make Seafood Fettuccine Alfredo, or Chicken Alfredo Alfredo Sauce: 1 cup butter 3 cloves of garlic, pressed 1 cup light cream or heavy cream 2 cups freshly grated Parmesan cheese 1/4 tsp. nutmeg 1 tsp. dried parsley A little fresh ground pepper In a large saucepan, melt butter over very low heat - DO NOT LET IT BROWN! Once the butter has melted, add pressed garlic, light cream, and freshly grated Parmesan cheese. Beat this with a whisk to keep the sauce from clumping. Once the sauce is smooth, season the sauce with nutmeg, parsley and fresh ground pepper. Turn down to a simmer and continue to stir sauce for about 10 minutes. Remove from heat and use on cooked fettucine, vermicelli or in your favorite recipe! Garnish with more Parmesan cheese and fresh ground pepper, if desired! To make seafood Alfredo... At the time you add the garlic, add your favorite seafood, such as shrimp, scallops and crab meat and saute until done...Remove seafood and then continue with the recipe above. Add seafood on top off cooked fettuccine or vermicelli noodles and pour sauce over top! Yummy! If you don't like seafood add chunks of chicken in place of seafood. NOTE: I prefer vermicelli noodles, because they are not as heavy as Fettuccine noodles And try adding artichoke hearts - gives it a nice zing. And green spinach noodles are a great touch, as well.
