Roxy Posted December 27, 2008 Share Posted December 27, 2008 Hurtin' Jalapeno Cheese Poppers: 1/4 cup all-purpose flour 1-1/2 cups of Ritz crackers crumbs 1 tsp salt 1 large egg 2-oz firm cream cheese or Jack cheese 12 Fresh Jalapenos Vegetable oil for frying Mix the flour, cracker crumbs and salt. In a seperate dish beat the egg. Cut the cheese into 1x1/2x1/4" cubes. Cut a 1-1/2" slit lengthwise into both sides of the jalapeno.Seed and devein for less heat. Insert the cheese. Then chill for about 5 minutes. Dip into the egg to coat then roll into the flour mixture. Shake off excess. Chill again for 5 minutes. If you have a problem getting the coating to stick rough up the skins with a fork or serrated knife. Deep fryin 2" of hot vegtable or corn oil, turning once or twice and drain on paper towels.
