Roxy Posted July 6, 2009 Share Posted July 6, 2009 Sunshine Cake: 1 box yellow cake mix 1- 4 serving size box vanilla instant pudding 1- 11 oz can mandarin oranges, undrained 1- 8 oz can crushed pineapple, undrained 2 eggs Combine everything in a bowl and beat at medium speed for 1 minute until well combined. Pour into a greased 9x13 baking dish and bake at 375 degrees for 35 minutes or until a toothpick inserted in the center comes out clean. Cool completely. Spread with prepared vanilla pineapple topping and store in the fridge. Vanilla Pineapple Topping 1- 8 oz can crushed pineapple, undrained 1- 4 sering size box vanilla instant pudding 1- 12 oz Cool Whip, thawed Mix the pineapple and pudding together, fold in cool whip until combined and frost the cooled cake.
