This is the best banana bread recipe I have ever made and is the only recipe I will use. Banana Bread: 2 cups flour 1 tsp. baking soda 1/4 tsp. salt 1/2 cup margarine 3/4 cup brown sugar 2 eggs, beaten 2-1/3 cups mashed bananas 1 tsp. vanilla 1/2 tsp. cinnamon 1/2 cup finely chopped walnuts Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda, and salt. In a seperate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas and finely chopped walnuts until well blended. Stir banana mixture into flour mixture-stir just enough to moisten. Spray loaf pan with Pam and pour batter into it. Cover the top with brown sugar. Bake for 60 to 65 minutes.
