Lower Carb Game Day Dip

 

This dip is unbelievably awesome...after many tweaks and variations, this is the final product! :worship

 

This recipe cordially serves about 10-12 people or more depending on what else you serve...I usually double it.

 

1. Finely chopped fresh garlic (4 pieces off one clove)

 

2. 2lbs. 93% Ground Beef (or if you want to kick it up a notch try Hormel's Hot Pork Sausage) :steam

 

3. Mexican Velveeta Bricks - 2 large ones.

 

4. Original Refried Beans - 2 large cans.

 

5. 1 small sweet yellow onion or vidalia onion finely chopped. :cry

 

6. 2 cans Rotel diced tomatoes (w/peppers) drained.

 

7. Large Crock Pot, 12" Skillet, collander (strainer for the guys) and Large Microwavable Glass Bowl.

 

8. Real Salted Butter 1 Tablespoon

 

9. (optional) 1/2 cup diced jalepeno or habenero peppers. :bounce <-- not recommended with new people around

On medium heat - melt butter in skillet - add garlic and onions - cook (I caramelize them) to your liking.

 

Add hamburger (or if you're brave the hot sausage) and mix well - brown until done and set aside to drain in the collander (strainer).

 

In a large glass bowl dump in 1 can refried beans and 1 container of cubed velveeta and mix. :duel

 

Microwave beans & velveeta for 2 minutes on HIGH, stir and put on HIGH for 3 minutes, stir (should be good)if not - put in for 1 more minute (time will depend on wattage of MW)

 

Dump into crock pot (set on low or about 140-145°F if you have temp control)

 

REPEAT with other can of beans & other velveeta

 

Open tomato cans and DRAIN THE JUICE, then add to crockpot and stir in

 

Add hamburger mixture to crockpot and mix in well. :cowbell:

 

If you want to kick it up a notch - add the jalepeno or habenero peppers at this point.

 

Salt to your taste. :koolaid2:

 

You can taste it right now, cant you? Serve with your favorite tortilla chips - It saves really well too in any tupperware for about a week or so - so give it a try!
