  1. BBQ Chicken Dip: 1-(8-oz.)-Pkg. Cream Cheese, Softened 1/2 Cup Bacon Ranch Salad Dressing 1/2-3/4 Cup Cattleman's Original Or Smokehouse BBQ Sauce 1 Cup Shredded Mexican Or Cheddar Cheese 1/2 Rotisserie Chicken, Shredded 1 Tsp. Garlic Powder 1/4 Cup Chopped Green Onions 1/4 Cup Chopped Cilantro 1/4 Cup Chopped Jalapenos-(From A Jar) 1/4 Cup Chopped Red Onions 1 Tsp. Chili Powder-(Use More If You Want It Spicier) Sliced French Bread/Tortilla Chips, For Dipping Preheat oven to 350 degrees. In a bowl, combine the cream cheese, salad dressing, BBQ Sauce, shredded cheese, green onions, spices, onions, cilantro, jalapenos; mix together. Stir in the chicken. Bake for 20 minutes or until the chicken mixture is hot and bubbly. Stir before serving.
  2. Grilled Potato Nibbles: Potatoes, Bite-Size Pieces Bacon, Cut In Half Olive Oil Salt Pepper Rosemary, Minced Cut potatoes into bite size pieces. Par-boil until barely fork tender. Drain and cool. Place in bowl and add oil, salt, pepper and rosemary. Toss to coat well. Wrap 1/2 slice bacon around potato piece and secure with a toothpick. Put indirectly on grill until bacon is crisp.
  3. Chicken/Beef/Tri Tip Rub: 1/2 Cup White Sugar 1/2 Cup Kosher Salt 1/4 Cup Paprika 2 T. Chili Powder 2 T. Fresh Ground Black Pepper 2 T. Garlic Powder 1/2 T. Cayenne Pepper Combine all ingredients in a bowl and mix throughly, or place in a container with a lid and shake well for about 1 minute. When using this rub, sprinkle a good amount on the meat and allow the meat to sit in the refrigerator for at least 2 hours to give the rub time to penetrate the meat. If possible allow the meat to sit overnight.
  4. Bacon Cheesebread: It’s a winner with everyone who tries it…You can impress anyone with this recipe! 1/2 lb. Uncooked Sodium Reduced Bacon 2 Cloves Garlic, Minced 1 T. Extra Virgin Olive Oil 1 Tsp. Fresh Lemon Juice 1/2 Cup Mayonnaise 1/3 Cup Freshly Grated Parmesan Cheese, Plus More To Garnish 1 Baguette, Sliced Lengthwise Directions- Preheat oven to 375 degrees F. Fry bacon in a small skillet until crispy. Remove from pan; pat excess oil and crumble. In a small bowl, combine all ingredients except baguette. Add crumbled bacon and stir well. Spread mixture evenly on both baguette halves. Bake on parchment lined baking sheet until slightly golden and top is bubbly, about 7 or 8 minutes. Cut into slices. Serves 6 to 8.
  5. I love the weather there, and it is a beautiful drive. Had an ocean breeze when the picture was taken and it blew my blouse out. I look like I weigh 200 lbs. but I'm not.
  6. Laughing:) Some women like to control their men and I am sure you men on huskerboard know what I am talking about:) I am not the control type of woman. He knows he can go away for a weekend from me anytime he wants to and he can go out with his friends whenever he wants to, etc. but, so far he hasn't done it. He must like my talking??? I don't keep tabs on my man, I trust him and I told him if he needs to get away from us that I would understand:)
  7. My 2 great friends from high school are flying out from Omaha to see us at the end of August:) They are twin sisters and we had so many great times together. I can't wait to see them. We will have such a great time:) My hon may have to get ear plugs because I am sure there will be non-stop talking:) We haven't seen each other for at least 16 years. We will show them a great time.

  9. White Cheddar Garlic Mashed Potatoes: 4 Russet Potatoes, Peeled & Cut In Half 8 T. Salted Butter, Room Temperature 1 Cup Sour Cream 1 Cup Sharp White Cheddar Cheese, Shredded 1-1/4 Tsp. Minced Garlic 1-2 T. Heavy Cream Or Milk Salt & Pepper, To Taste Cook potatoes in a large pot of salted water for about 20 minutes, or until tender. When potatoes are tender, strain them and transfer to a large mixing bowl. Add butter, sour cream, cheddar, garlic, and salt & pepper, and mash with a potato masher. Once combined, add heavy cream-(or milk)-1 Tsp. at a time, until desired consistency.
  10. Alfredo Sauce: 4 T.-(1 Stick)-Butter 1 Cup Heavy Cream 1-1/2 T. Cornstarch 1 T. Cold Water 1/2 Cup Parmesan Cheese, Shredded Salt & Pepper, To Taste Melt the butter in a large saucepan over medium-high heat. Slowly whisk in the heavy cream. Cook, over medium heat until simmering. Combine the cornstarch and cold water in a small bowl or cup, whisk into the cream mixture. Cook, whisking constantly, until sauce thickens, 2 -3 minutes. Take off heat, and whisk in the Parmesan Cheese. Season to taste with salt and pepper.
  11. BLT Skewers: 1 Package Cheese Tortellini-(You'll Need 24.) 12 Cherry Tomatoes 1 Head Iceberg Lettuce 1/2 lb. Cooked Bacon-(Not Too Crispy Or It Will Break Apart When You Put The Skewer Through) 1/4 Cup Honey Mustard 12 S Cook the tortellini according to the package directions. When they are done, drain them and rinse with cold water to stop the cooking process. It will also help cool them off since they are much easier to skew when they aren't pipin' hot! Cut bacon slices into about 1 inch squares. You will need 24 squares of bacon; 2 per skewer. Cut bacon into pieces about the same size as your bacon, about 1inch squares. Time To Assemble: Skewer one tortellini, followed by a tomato, then your lettuce; add 2 bacon squares and finish it off with another tortellini. Repeat the process for all your skewers Drizzle with honey mustard or your favorite dressing.
  12. We ate at a seafood restaurant before the concert and it was right by the ocean. It was so beautiful, we saw fishing boats and seals.
  13. Caramelized Sriracha Bacon: 8 Slices Of Thick-Cut Bacon 1 Cup Brown Sugar 1-1/2 T. Sriracha... 1/4 Tsp. Cinnamon Preheat oven to 400 degrees. Line a rimmed baking sheet with foil and place a wire rack in the middle. Grease rack with non-stick spray. Place bacon on wire rack being careful not to overlap. In a small bowl, combine sugar, Sriracha and cinnamon. Microwave for 20-25 seconds to make it easier to spread. Spoon half of mixture onto bacon and spread to cover. Bake for 13 minutes. Remove bacon and flip. Spread with remaining sugar mixture. Return to oven and bake an additional 13 minutes. Remove and allow to cool for 2 minutes. If you want the bacon crispier, broil for 30 seconds to 1 minute, watching closely so it doesn't burn.
  14. This cheesebread is better than Pizza Huts. You can adjust the ingredients as you prefer them. I did measure the last time I did it and wrote down how much I used. Steak/ Potato Salad/Cheesebread in picture. Cheesebread: Fairy Dust: 1-(32-oz.)-Jar Kraft Parmesan Cheese 8 T. Garlic Powder 4 T. Oregano 1 Tsp. Onion Salt Mix all the Fairy Dust ingredients together and put it in the empty Kraft Parmesan Cheese shaker. Slice French Bread according to how many slices you need; don't cut it thin! Put some softened butter in a bowl-(according to how much you think you need to spread on the bread slices)-and sprinkle in Garlic Powder-(how much you like)-mix. Spread butter/garlic powder mixture on both sides of French Bread. Cover the top of each slice of bread with Finely Shredded Parmesan Cheese Blend and then put Shredded Mozzarella Cheese over the Finely Shredded Parmesan Cheese Blend and cover that with some more Shredded Parmesan Cheese Blend. Shake Fairy Dust over the top. I put the bread in a tupperware container and refrigerate it until I need it for dinner, one less thing to do at dinner time:) Bake at 325 degrees until the cheese is melted. We like it when it is a little brown on top, but, bake it for how long you like it. Keep an eye out on it.

  16. Bacon-Wrapped Jalapenos: 4 Jalapenos 6-8 T. Cream Cheese 1 Cup Mexican Cheese Mix 8 Strips Of Bacon Preheat oven to 375 degrees Cut jalapenos in half lengthwise and remove insides and seeds. Lay them out on a greased baking sheet. Fill each one with cream cheese then sprinkle Mexican Cheese on top. Wrap 1 strip of bacon around each jalapeno. Secure with a toothpick, if needed. Bake for 20-25 minutes. ***If bacon isn't cooked as you'd like it, turn broiler on low and broil until you reach desired crispiness. ***Be sure to keep an eye out on it!
  17. I keep the pictures of food I make on my computer in pictures. I was going to post picture of us at the concert and before but I can't get them to load. So I guess from now on I won't be posting pictures of food and I will miss doing that.

  20. I am more familiar with Def Leppard's songs so I liked them more and as far as performance goes, they both were good, but, I think Def Leppard put on the better show. As you all probably know, their drummer only has one hand and he was fantastic and their guitar player was great too. he worked the stage. However Lindsey Buckingham from Fleetwood Mac is still my number one guitar player:) Tesla talked more though so that is always a big plus to me. One member of Def Leppard's band has been sick, but, when he was introduced, they said he was "healthy" so that was great to hear.
  21. Well..we survived the Def Leppard concert:) It was alot of fun, my ears are still ringing:) No, they are back to normal and my feet have recovered..I think anyway. After the concert we had a very hard time getting to the shuttle to go back to our hotel, we walked and walked. We finally tracked down the right shuttle and made it back to our hotel safe and sound. Tesla opened for Def Leppard and and they were good too. The crowd was interesting and I almost like that rather than the concerts we have seen, just kidding..but..it is fun to watch the crowd and sometimes talk to whoever wants to talk...like me:) You all know that I love to talk. Talked to a couple who was making out all during the concert. They told me they had just met not too long ago and she told me that she thinks she is in love and lets see..oh some girl was really bombed and poured part of her beer on my arm..then I got winked at by some guy in the stands. Maybe he just had a fly or something in his eye, because I am too old to be winked at:)
  22. Bacon-Wrapped Lil' Smokies: 1 Pkg. Lil' Smokies Sausages-(Your Favorite) 2 lbs. Bacon 1-1/2 Cups Brown Sugar Preheat oven to 375°. Cover a metal baking pan with foil to make clean up easy. Place a wire rack over the foil and coat with non-stick spray. Set aside. Cut bacon into thirds using kitchen shears or a sharp knife. Add brown sugar to a shallow bowl or pie dish. Dip bacon into brown sugar, lightly coating each side. Wrap around a Little Smokie. Place on wire rack and repeat with the rest. Bake for 25-30 minutes or until bacon is crispy. Turn oven to broil and continue cooking for 1 minute or until desired crispiness. Keep your eye on them so they don't burn. Note: If you find the bacon won't stay wrapped around the Smokie, you can secure with a toothpick. Soak toothpicks in a bowl of water for several minutes before using. This helps prevents them from burning while baking.
  23. We are leaving tomorrow morning to go see Def Leppard in concert tomorrow night. Will spend some time in Morro Bay, go to the concert and spend the night. It is going to be fun:) You all will have a break from me posting recipes:)
  24. Crockpot Creamy Chicken: 1-lb. Chicken Tenderloins Or Boneless Chicken Breast 1 Family Sized Can Of Cream Of Chicken Soup 2/3 Cup Sour Cream 1 T. Minced Garlic 1/2 Cup Shredded Sharp Cheddar Cheese 1 Pkg. Frozen Assorted Vegetables Shown In Picture: Prepackaged Bag Of Carrots/Broccoli/Cauliflower Salt & Pepper, To Taste Egg Noodles Combine in a Crockpot cream of chicken soup, sour cream, minced garlic, cheese and salt and pepper. Add chicken into sauce mixture, make certain to cover chicken with sauce. Add the vegetables on top of sauce and then add salt and pepper to taste to the vegetables. Cover and turn Crockpot on low. Cooking times will depend on how thick chicken is. If you usechicken tenderloins which are thinner, chicken will be done after 4-1/2 hours. If using a thicker chicken breast, continue in the crock pot until fully cooked. Before you are ready to serve, prepare egg noodle according to directions on bag. Stir sauce in Crockpot prior to serving. Serve over egg noodles.
