  1. This is one of my favorite dishes. Great Northern Beans: Use a slotted spoon to put it on your serving dish so the water isn’t in it. I put what I want in another pan on the stove and put shredded cheddar cheese on top and stir it until it melts. You can also use cut up bacon instead of ham hocks. I bet green chiles/jalapenos and hot sauce would be good in it also. 1 lb. Great Northern Beans 1 White Onion, Diced 1 Bunch Garlic, Separate Cloves 1 Green Bell Pepper, Diced Deli Ham Hocks ***I Sometimes Put Baby Red Potatoes In It In a bowl, soak Great Northern Beans in water overnight in the refrigerator. In the morning, drain off water in the Great Northern Beans. Put Great Northern Beans in Dutch Oven Cover Great Northern Beans in water; bring to a boil. Add 1 chopped white onion, 1 diced green bell pepper, garlic cloves and ham hocks; stir well. Cook on LOW all day on the stove, stirring occasionally.

  4. Bacon-Wrapped Tater Tots With Dipping Sauce: Thick Cut Peppered Bacon Olive Oil Salt & Pepper 1 Cup Sour Cream 1 Tsp. Hot Sauce Preheat the oven to 400 degrees. Slice the potatoes into same size pieces, add to a pot of cold water, bring to a boil, season with salt and cook for 5 minutes, or until the potatoes are almost cooked through. Drain the potatoes, season with salt and pepper. Slice bacon into thirds, wrap each potato with a slice of the bacon, place on a baking sheet and bake for 15 minutes, flip the potatoes over and bake for another 15 minutes. Mix the sour cream and Hot Sauce together and serve in a bowl off to the side to use as a dipping sauce for the bacon-wrapped tater tots.

  7. Crockpot Pork Sandwiches: 2-(1-lb.)-Pork Tenderloins 2 Cups Ketchup 4 T. Plus 3 Tsp. Brown Sugar ***Use Less If You Like It Less Sweet 4 T. Plus 3 T. Cider Vinegar 2 T. Plus 3 Tsp. Worcestershire Sauce 2 T. Spicy Brown Mustard 1/2 Tsp. Pepper ***Add Chopped Onion & Garlic, If You Want Split Kaiser Rolls Cut the tenderloins in half and place in Crockpot. Combine the rest of the ingredients and pour over pork. Cover and cook on low 7-8 hours, or until meat is tender. Remove meat, shred with 2 forks, return meat to Crockpot and heat through.
  8. Grilled Bacon Ranch New Potatoes: 15 Small New Potatoes 5 Slices Bacon, Cut Into Thirds 1-(1-oz.)-Pkg. Hidden Valley Ranch Dressing Mix 15 Toothpicks Preheat an outdoor grill for low heat, and lightly oil the grate. Wrap each potato with a piece of bacon and secure with a toothpick. Sprinkle the potatoes with Hidden Valley Ranch Dressing Mix. Place the wrapped potatoes on the grill, turning the potatoes several times to allow the bacon to cook on all sides. The potatoes will be done when the bacon is nice and crispy; about 20-25 minutes.
  9. Bacon Taco Pizza: 1 Can Pillsbury Artisan Pizza Dough Or Your Favorite Pizza Dough 1-(8-oz.)-Pkg. Cream Cheese 1 Pkg. Taco Seasoning 1/2 Cup Shredded Cheddar Cheese 1/2 Head Of Lettuce, Shredded 1 Whole Tomato, Diced 6 Strips Of Bacon Bake the pizza crust according to package directions. In a bowl, combine the cream cheese and Taco Seasoning and spread that over the cooled pizza crust Top with remaining Taco ingredients. ***Add whatever other Taco ingredients you like on your pizza. Cut into serving pieces.
  10. If I have whipping cream on hand, I always use it instead of milk. I think it makes the potatoes richer and better.
  11. Fried Chicken & Gravy: 8 Serving Pieces Chicken, Light Or Dark Meat Salt 2 Cups Peanut Oil, More If Needed Black Pepper 2 Cups All-Purpose Flour Gravy: 4 T. Oil From Fried Chicken 4 T. All-Purpose Flour 2 Cups Milk Salt & Freshly Ground Black Pepper For The Chicken: Put the chicken pieces in a large bowl and cover them with water. Sprinkle 2 tablespoons salt in the water, cover the bowl, and refrigerate for 4 hours or overnight. When you soak the chicken overnight in salt brine, the salt infuses into the meat and makes it so tasty! Pour oil into an electric frying pan or deep, heavy skillet to a 1-inch depth and heat the oil to 375 degrees F. Check the temperature by sprinkling flour over the oil. If the flour sizzles, the oil is hot enough. Drain the water from the chicken, sprinkle each piece with some salt and pepper, and coat the pieces with flour, shaking off any excess. Carefully place the chicken in the hot oil. Place the cover on the pan, leaving a small opening for steam to escape. Cook for 15 minutes. Remove the cover and, using tongs, turn each piece of chicken. Replace the cover and cook for 15 minutes more, or until done. Use a sharp, thin-bladed knife to check for doneness by slicing a drumstick to the bone. Neither the meat nor the juices should be pink. Drain the chicken on paper towels and keep warm. For The Gravy: Spoon about 4 tablespoons of oil that the chicken was fried in plus the brown bits into a medium skillet. Over medium heat, sprinkle in the flour and cook while whisking, until the flour is browned, about 1 minute. Slowly stir in the milk and cook until the gravy thickens, 5 to 10 minutes. Season with salt and pepper and serve over mashed potatoes.
  12. Pecan Pie: 1 Cup Light Brown Sugar, Packed 1/2 Cup Granulated Sugar 2 Large Eggs 1 Cup Chopped Pecans 1/2 Cup-(1 Stick Butter), Melted 2 T. Milk 1 T. All-Purpose Flour 1-1/2 Tsp. Vanilla Extract 1-(9-in.)-Deep Dish Pie Shell, Unbaked Or Homemade Pastry 1 Cup Pecan Halves Whipped Cream Or Vanilla Ice Cream, For Serving Preheat the oven to 325 degrees. In a large mixing bowl, mix the brown sugar, granulated sugar and eggs until creamy. Add the chopped pecans, melted butter, milk, flour and vanilla extract and stir to combine. Pour the mixture into the pie shell. Arrange the pecan halves on top of the pie in a circular pattern. Bake the pie for 55 minutes. Check for doneness by shaking the pan slightly. The pie should be firm with only a slight jiggle in the center. It will set more as it cools. Serve topped with a dollop of whipped cream or vanilla ice cream.

  15. Chicken Parmesan: 1-(26-oz.)-Jar Of Your Favorite Pasta Sauce 1 Cup Grated Parmesan Cheese-(Set Aside 4 T. For Use Later) 6 Small Boneless, Skinless Chicken Breast Halves-(1-1/2-lbs.) ***Use 4 Chicken Breasts For 3 People 3 Or 4 Cloves Crushed Garlic 2 Cups Chopped Fresh Mushrooms 1-1/2 Cups Shredded Mozzarella Chees Preheat oven to 375 degrees. Pour sauce into 13x9-in. baking dish. Carefully stir in the Parmesan Cheese, garlic, and mushrooms. Add chicken; turn over to evenly coat both sides with sauce. Cover with foil. Bake 45 minutes, then uncover. Top with Shredded Mozzarella Cheese and remaining 4 T. Parmesan Cheese; continue baking 10 minutes or until chicken is cooked through and cheese is melted. Serve over hot cooked pasta. ***If you like more sauce, you can add about a 14- oz. can of tomato sauce, 1 Tsp. of dried basil and 1 Tsp. of white sugar to the pan and mix it well with the jarred sauce.

  20. I like to serve this over hashbrowns and biscuits. Sausage Gravy: 1 lb. Breakfast Sausage, Hot Or Mild 1/3 Cup All-Purpose Flour 3-4 Cups Whole Milk, More To Taste 1/2 Tsp. Seasoned Salt 2 Tsp. Freshly Ground Black Pepper, More To Taste Biscuits, Warmed, For Serving ***Can Add Chopped Onion & Jalapeno Sliced If You Want A Little Kick Added With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly. Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more, if needed. Taste and adjust the seasoning. Spoon the sausage gravy over warm biscuits/hashbrowns and serve immediately.
