  1. Crockpot Pork Chili Dip: 1 T. Bacon Drippings 1 T. Olive Oil 4 lbs. Pork Loin Roast 1 Onion, Chopped 5 Garlic Cloves, Peeled & Minced 1 Qt. Chicken Broth 1 T. Salt 1-1/2 T. Coriander 1 Tsp. Hot Chamayo Chili Powder 1 Tsp. Of Your Favorite Chili Powder 1-1/2 T. Mexican Oregano 1-(14.5-oz.)-Can Chopped Tomato, Undrained 15 Chile Peppers, Chopped 1/2 Cup Water 1/4 Cup Cornstarch Season the pork roast with salt and pepper. Place in a large Dutch Oven. Cover and roast in a 350 degree oven until done; about 3 hours. Remove the roast from the pan and let cook and then shred the meat with 2 forks; set aside. Heat the oil and the bacon drippings in the same Dutch Oven. Add the onion and cook until soft, about 10 minutes. Add the garlic and cook until fragrant. Add the shredded meat, tomatoes, chicken broth, salt, coriander, oregano, tomatoes, Chile Powders and Chiles. Bring to a boil and then simmer on low for 2 hours. In a bowl, combine water and cornstarch and stir until combined. Towards the end, add a little of this to thicken the dip. Serve with warm flour tortillas.Right before serving, sprinkle with Chimayo Chili Powder. Omit if you don’t have Chamayo, most chili powders are pungent strong and would change the light and perfect flavor of this dip
  2. Our dog that died was named Sammie too...the 2 little dogs ate a little last night. We are keeping a good eye on them and will take them to our vet, if necessary. We give them a lot of attention. We will see how it goes with them before deciding whether or not to get another dog. 2 dogs are really enough. If we do decide to get another dog, we will get one from the pound and save it. The 2 little dogs are part dachshund and something else. They are named Husker and Haley. Thank you both for answering my question, I really appreciate it:)
  3. We had to put down our dog yesterday who always protected me. We had her for over 13 years. It was a hard decision to make, she was suffering a lot. Now our other 2 little dogs aren't eating the dog food. One dog did eat a bone, we even bought them wet food and they won't touch it. Does anyone know if this is common for them to not eat after a dog has died that they have been with for years and what can we do to make them eat if they keep it up not eating? I am afraid they will die too if they don't eat. They were close to the dog that died and I don't know what we can do.

Jalapeno Peppers On The Smoker: ***Use Hickory Chips Plump Jalapenos-(Not Too Long) 1 Cheddar Filled Hillshire Farms Lil Smokie For Each Jalapeno Pepper 1 Slice Bacon For Each Jalapeno Pepper Cream Cheese Cajun Seasoning Or Just Use Onion/Chive-(Opt.)-Can Add To Cream Cheese Preparation: An hour or so before building the peppers, take out the bacon and the cream cheese and let it warm up some. It will allow the cheese to spread more easily and the bacon to stretch and wrap more easily, sticking to itself so you won't need toothpicks. Cut the tops off the peppers, cut a slit in one side and clean out with a spoon. Remove the seeds and the veins. Take the back of the spoon and spread some cream cheese in the pepper, using your thumb to hold the pepper open. Place a Lil Smokie in the pepper. Add more cream cheese with the back of the spoon, squeezing the pepper closed while doing so. Fill the slit and the end. Lay the bacon over the cut end, capping it off. Stretch the bacon towards the other end of the pepper, catching the other end and wrapping the bacon back towards the cut end in a spiral motion. You will be wrapping the bacon over the flap of bacon you used to cap the open end, holding it in place. In order for you to have enough bacon to do this, you must stretch the bacon as you go. This will also allow the bacon to stick to itself, so you can leave the toothpicks in the cupboard. Smoke these on the Weber for about 2-1/2 to 4 hours depending on weather conditions-(temperature 220 F.)
  8. Smoked Chicken & Veggies: Marinate a whole chicken with Olive Oil, lemon juice, rosemary, oregano, thyme, salt, pepper and garlic. Smoke it on a Weber at 250 F for 2-1/2 hours using apple and cherry wood. Serve with roasted potatoes and green beans sautéed in butter and garlic.

  10. 1 Cup Milk 1 Egg 1/4 Cup Vegetable Oil 1 Small Sweet Onion, Chopped 1/4 Cup Chopped Jalapenos From A Jar 1-1/2 Cups Shredded Cheese Of Your Choice: Cheddar/Colby/Smoked Provolone Or A Mix 8-ozs. Creamed Corn 1-1/4 Cups Cornmeal 3/4-1 Cup Flour 1/4 Cup Sugar 1 T. Baking Powder 1/2 Tsp. Salt Preheat oven to 400 degrees. Mix milk, egg and oil; add onions , jalapenos, cheese and corn. Mix dry ingredients together and mix with wet ingredients just until moistened. Pour into a greased 10x7-in. pan and top with more shredded cheese and sliced fresh jalapenos. Bake 25 to 30 minutes, until lightly browned. Top with melted butter, if desired. *Change it up by using buttermilk in place of regular milk & also used self-rising cornmeal and omitting the baking powder. Jalapeno Cornbread:
  11. I didn't have any walnuts, so used pecans-use whatever you want.

  13. This is my favorite banana bread recipe. The brown sugar on top really makes it good. With fall coming soon, thought someone may want to make this. Banana Bread: 2 Cups Flour 1 Tsp. Baking Soda 1/4 Tsp. Salt 1/2 Cup Margarine 3/4 Cup Brown Sugar 2 Eggs, Beaten 2-1/3 Cups Mashed Bananas 1 Tsp. Vanilla 1/2 Tsp. Vanilla 1/2 Tsp. Cinnamon 1/2 Cup Finely Chopped Walnuts Or Pecans Preheat oven to 350 degrees. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas and finely chopped walnuts until well blended. Stir banana mixture into flour mixture, stir just enough to moisten. Spray loaf pan with Pam and pour batter into it. Cover the top with brown sugar. Bake for 60 to 65 minutes. Let pan cool for 10 minutes.

I was so mad at myself for trying to attempt to change my email address and I did ask for help. The next time I logged in here, I could post and read posts.   17. 2 lbs. Green Beans 1 Vidalia Onion, Chopped 1 Cup Deli Diced Ham 10-12 New Potatoes Water Salt & Pepper ***Sometimes I use bacon instead of ham. Combine approximately 4 cups water, the ham, and the chopped onion in a large pan. Bring to a boil, lower heat, then simmer while preparing the beans and potatoes. Add stringed, snapped and rinsed green beans. Cook for about 30 minutes. Scrub potatoes with a vegetable brush and cut a strip around the middle with a vegetable peeler. Add to the pot along with salt and pepper, to taste. Cook until the potatoes and beans are tender, checking and adding more water if needed. Serve with coarse sea salt and freshly ground black pepper.***I like to add some butter also.
  18. Twice Baked Potatoes: 4 Large Baking Potatoes Olive Oil Sea Salt 4 Slices Bacon 1-1/2 Cups-(6-oz.)-Shredded Sharp Cheddar Cheese 1/2 Cup Sour Cream 4 T. Softened Butter 2 T. Snipped Chives Scrub potatoes very well under cold running water. Dry them, then rub all over with Olive Oil. Place onto a baking sheet and sprinkle with salt. Bake at 400 degrees for 60-70 minutes, until fork tender. Remove from oven and set aside until cool enough to handle. Cook bacon until crisp, then drain on paper towel. Slice off the top quarter of each potato. Using a spoon, scoop out the flesh leaving a quarter inch of flesh on the skin. Place all the scooped out potato into a bowl and mash with a hand masher. Add the butter and sour cream and continue mashing until smooth. Stir in 1 cup of the cheese and the reserved bacon, crumbled. Stir in the chives. Add salt and pepper to taste. Spoon the potato mixture back into each of the potato shells. Sprinkle with remaining cheese. Bake until heated through and the cheese is melted.
  19. 18 Jalapenos 1/4 lb. Shrimp 1/4 lb. Crab Meat 1/4 Cup Finely Diced Onion 4 Slices Bacon Salt & Pepper Olive Oil Start by cutting the bacon into pieces about one inch in length. Sauté-(cook in a skillet)-the bacon, garlic, and onion with olive oil for about two minutes. Then, add the seafood, salt and pepper to taste, and continue to sauté for another three minutes. Remove from the heat, and while it cools, remove the stem and seeds from your jalapenos. Stuff the jalapenos with the seafood and bacon, and grill for about seven minutes. You'll need to rotate the jalapenos occasionally for even cooking. You'll also likely need to lightly oil your grill grate, as jalapenos tend to stick to the grate as they cook. Remove from the heat and serve hot.

  21. Bacon-Wrapped Jalapenos: 15 Jalapenos ***When Cut In Half, Makes 30 1 Pkg. Cream Cheese 1 Pkg. Bacon, Each Slice Cut In Half Toothpicks Cut jalapenos in half and clean. If you want more heat, leave in the veins and seeds. Put as much cream cheese as you can on that half and wrap with a half slice of bacon. Try to cover the open end and the top really good so there is less cream cheese leakage. Stick a toothpick in from the top to bottom to hold bacon in place and prevent rolling up for falling off. Cook in preheated oven at 350 degrees for about an hour or desired crispiness. Tip: Freeze Bacon The Night Before. Take The Bacon Out The Next Morning & Cut In Half; Refrigerate Until Ready To Make. Frozen Bacon Is Easier To Cut.
